trying nyc viral hot chocolate!! is it the best i’ve ever had? honestly, yes. vegan marshmallow fluff recipe: ⅓ cup aquafaba (liquid from a chickpea can) ½ cup (100 g) granulated sugar ¼ tsp cream of tartar instructions: add the aquafaba and sugar to a heat-safe bowl and place it over a pot of gently simmering water (the bowl shouldn’t touch the water). whisk constantly for about 5–7 minutes, until the sugar is fully dissolved – if you rub a drop between your fingers it should feel completely smooth, no graininess. transfer the mixture to a mixer, add the cream of tartar, and whip on high speed for 7–10 minutes until thick, glossy, and holding stiff peaks. the bowl should feel cool and the texture should look smooth and marshmallowy. transfer to a piping bag, pipe a ring around your mug, torch until toasted, then pour in your hot chocolate and let it melt in. enjoy🤍 . . . . #hotchocolate #viralrecipe #foodvideo #nycfood #christmas

Ingredients: 2 tbsp olive oil 1 onion, diced 2 celery stalks, diced 2 carrots, diced 3 garlic cloves 1 zucchini, diced 1 large potato, diced 1-2 cups green beans, chopped 1 can diced tomatoes 1 tbsp tomato paste 1 tsp dried oregano ½ tsp dried thyme Salt and black pepper 4 cups vegetable broth 2 cups water 1 can cannellini beans 1 can borlotti or kidney beans 3 cups kale or baby spinach 2 bay leaves ¾ cup small pasta, e.g. ditalini, shells 1 lemon Crusty bread, to serve Scoop of Daily30+ by ZOE Instructions: Heat olive oil in a large pot over medium heat. Add the onion, celery, and carrots with a pinch of salt and cook until softened. Stir in the tomato paste and let it cook for a minute or two, then add the zucchini, potato, green beans, garlic, oregano, and thyme. Cook for another minute until fragrant. Pour in the diced tomatoes, broth, and water. Bring to a boil, then add the pasta, beans, bay leaves, and season with salt and pepper. Lower the heat, cover the pot, and let it simmer until the vegetables are tender and the pasta is al dente. Add the kale or spinach and cook for another minute until wilted. Remove from heat and discard the bay leaves. Finish with a squeeze of lemon juice and a drizzle of olive oil.
