COCONUT HORCHATA 🇲🇽 written recipe below 👇🏾 I stopped drinking alcohol around 4 years ago and this time every year, although I am tempted by the festivities and fun; I am always reminded of how grateful I am for removing alcohol from my life! My reliance on it to be able to show up and get through situations I wasn’t really comfortable in was actually very stressful looking back on it now. Why was I drinking in social situations? Because a lot of these people weren’t actually my friends or I wasn’t comfortable. Why did I turn to alcohol when I was stressed, sad or even happy with life? Because it numbs those overwhelming feelings but at what cost? It can be difficult to face those feelings head on but I now put myself in less stressful situations, thus I have less stressful feelings I need alcohol to deal with - it was difficult at first because we’re conditioned to think of alcohol as the answer but the question is, do you want a better life? 👇🏾ingredients👇🏾 -1 cup uncooked white rice -1 cup shredded coconut -4 cinnamon sticks -few pimento seeds -few sprigs of thyme? -1 litre boiling hot water to soak -300ml coconut cream -1 can coconut milk -4 tbsp sweetener (agave, maple syrup, sugar) -1 tsp vanilla extract -ground cinnamon/nutmeg, thyme, smoked cinnamon stick for garnish 👇🏾method👇🏾 -toast the rice, shredded coconut, cinnamon sticks and pimento @ 180° for 20-25 minutes or until browning and fragrant. -mix with the boiling water, then once cooled allow to refrigerate over night (around 12 hours). -remove the ingredients from the water then blend until smooth with the cream, milk, sweetener, vanilla extract and a pinch of salt. -sieve once or twice to remove any large chunks, mix with ice or you could heat up/add cocoa powder then serve with the garnishes and enjoy! #recipe #drinks #horchata #coconut #alcoholfree
TOFU SKIN ROAST CHICKEN 🐔 written recipe below 👇🏾 I am always hearing how ‘there is no protein in plants’ well can somebody tell me why dried tofu skin actually has more protein than the most protein dense meat available; chicken 👀 With some dried varieties reaching almost 50% compared to chickens around 25% 😮 although not all tofu is as protein dense and once hydrated the dried stuffs content is reduced slightly, however, it is still an interesting observation when looking at plant based proteins! 😊 👇🏾ingredients👇🏾 -sheets of dried tofu skin (also called bean curd) -1 tbsp vg chicken seasoning -or 1 tsp garlic powder/onion powder -1/2 tsp smoked paprika + white pepper -2 tsp dried mixed herbs -2 tbsp nutritional yeast -1 tbsp soy sauce -1 tbsp olive oil -vegetable stuffing 👇🏾method👇🏾 -hydrate the stuffing then leave it firm up before rolling into a log. Add nuts, dried fruit etc if feeling fancy. -hydrate your tofu sheets, allow to dry then wrap round the stuffing log. If you wrap one by one you will get a tighter more even roll. -coat in hydrated rice paper, then in the seasoning and bake until crispy, coating in more seasoning as you go. -serve with a roast dinner, with plenty of gravy and enjoy! #recipe #recipes #food #cooking #chicken #protein #roast #tofu #christmasfood #christmas #xmas
CRISPY SPROUT + POTATO SALAD 🥔 written recipe below 👇🏾 Some people really don’t like Brussel sprouts but when you smash them along with some potatoes and then bake them, they go SO CRUNCHY! Pair that with this light, creamy dressing and you’re in for a taste sensation! 👇🏾ingredients👇🏾 -bunch of baby potatoes (500g) -bunch of Brussel sprouts (500g) -1 tsp dried basil, oregano + thyme each -1/2 tsp smoked paprika + white pepper each -4 tbsp nutritional yeast -olive oil, salt + pepper for roasting -few tbsp unflavoured vg yoghurt -juice of 1 lemon -bunch of fresh parsley + chives -crispy onions, fresh herbs and chilli oil for dressing 👇🏾method👇🏾 -boil the potatoes, steam the sprouts then once soft, allow to cool/dry then smash on a lined baking tray. -add seasonings and oil then bake @ 200° for 30-45 mins or until crispy. -mix up the dressing, coat the crispy veggies in it then serve topped with the garnishes and enjoy! #recipe #recipes #food #cooking #potato #salad #sprouts #brusselsprouts #comfortfood
BLACK BEAN BOWL 🥣 written recipe below 👇🏾 Ultra processed foods are the current hot topic and although we should be mindful of their consumption, some have been using this to push a diet focused on eating more red meat, eggs + other animal products which produce similar results to your health as the UPF’s you’re trying to avoid! Eating mainly, a plant based whole foods diet is the biggest positive change you can make to your diet and it also helps the animals and planet too! ❤️ 👇🏾ingredients👇🏾 -1 tbsp garlic paste @verylazyfooduk -1 large white onion -1 large celery stick -1 tsp smoked paprika/cumin/oregano each -1 tbsp tomato paste -1 cup veg stock -can or 2 of black beans -few bay leaves -fresh thyme -salt n pepper to taste -diced tomatoes, fresh herbs, fried plantain, yoghurt and lime for garnish. Serve with rice. 👇🏾method👇🏾 -fry the garlic paste, minced onion and celery until soft and browning then add the dried spices, tomato paste and toast for another couple of minutes. -add the beans, stocks herbs, salt and pepper then simmer to thicken and reduce, soften the beans and allow the flavours to come out. -serve with the rice and garnishes then enjoy! #food #recipe #cooking #blackbeans #beans #healthy #healthyfood #easyrecipe
LEMON PEPPER POTATO POPS 🥔 written recipe below 👇🏾 Potatoes are everyone’s favourite carb and they’re best served crispy and golden 😋 here they’re goeey in the inside with that craggily crunchy on the outside, potentially making them the best tatties about! 😮 👇🏾ingredients👇🏾 -6 large white potato -1 tsp garlic/onion powder each -1/2 tsp basil/oregano/paprika powder each -8-12 tbsp corn flour -big pinch salt n pepper -6 large lemons (need 4-6 tbsp dried) -juice of 2 lemons -few tbsp olive oil -1 tsp garlic powder -1/2 tsp white pepper -handful of parsley -big pinch of salt n pepper 👇🏾method👇🏾 -remove the zest from the lemons, spread on a lined baking tray then bake for 2-3hrs @ 50-70°. Mix the dehydrated lemon zest with the rest of the ingredients of the sauce. -peel, dice and boil the potatoes until soft then mash them up with the seasonings and flour into a mouldable dough. -take a pinch of the dough, roll into a ball before baking, air frying or deep frying util crispy. -coat in the seasonings, serve with a fresh creamy dip and enjoy! #recipe #cooking #potato #snack #food #lemon #pepper #comfortfood

GARLICKY DIP 🧄 written recipe below 👇🏾 Garlic is everyone’s favourite aromatic, it’s; deep, rich and when cooked slowly in olive oil it goes all soft and buttery, the perfect base of this delicious dip! 😋 👇🏾ingredients👇🏾 -around 30 to 40 cloves of garlic -1 large white onion -lots of olive oil -few tbsp vegan cream cheese @palaceculture 🧀 -few tbsp nutritional yeast -bunch of fresh chives and parsley -juice of 1 small lemon -salt n pepper to taste -fresh herbs, chilli oil or chilli flakes and some fresh bread to serve it with 👇🏾method👇🏾 -simmer the cloves and onion low and slowly, until they turn soft and caramelised. -mash and mix with the rest of the ingredients and a splash of the garlic infused oil. PEA FRITTERS 🫛 written recipe below 👇🏾 Peas are a properly underrated, healthy + nutritious vegetable 😮 they’re packed with easily digestible proteins and being so cheap and versatile, we should really be eating more of them! Here we’ve turned them into a delicious snack paired with a dip that I hope you enjoy! 👇🏾ingredients👇🏾 -300g frozen peas (cooked) -1 garlic clove -few tbsp nutritional yeast -bunch fresh parsley -small bunch mint -salt n pepper to taste -1/2 cup white flour (use more if too wet) -1/4 cup water (use more if too dry) -yoghurt, lemon juice, mint/parsley + salt for the dip/sauce 👇🏾method👇🏾 -blend or mash half of the peas, with garlic, nutritional yeast and water. -add the other half of the peas, finely chopped herbs, flour, salt and pepper then mix until combined. -shape into small patties, then fry or bake until crispy then serve with a sauce and enjoy! #recipe #healthyfood #peas #snack #protein
SWEET POTATO BROWNIE 🍠 written recipe below 👇🏾 Convenience and processed foods are everywhere, it’s most of what’s available in supermarket shelves which can make it feel like we’re being forced into it eating it! Sweet treats and snacks aren’t there just to fuel you but it’s better when they do 🤝 so every now and then I swap my usual go to snack and make a healthier, whole foods alternative like these sweet potato brownies packed with healthy fats and nutrients that are easily digestible! Btw if you need a snack, convenience food or something processed (for whatever reason) then go for it but when you’ve got the time and energy you might like these too! 😊 👇🏾ingredients👇🏾 -1 to 2 large sweet potato (around 2 cup cooked mash) -1/2 cup peanut butter -1/2 tbsp cocoa powder (maybe use melted choc) -4 tbsp peanut powder (blended peanuts) -1/4 to 1/2 cup maple syrup/agave syrup -salt to taste 👇🏾method👇🏾 -peel and cut the potato into small, equal sized chunks then steam until soft. If you boil, allow them to steam dry to remove excess moisture. -mash or blend into a smooth paste then add the other ingredients and combine fully. -add fillings like; chocolate chips, nuts or dried fruit then pour into a lined/greased baking tray, add toppings then bake for 25-30 minutes @ 170/80c.
