@jar.of.lemons Oh my goodness, these Street Corn Chicken Rice Bowls are seriously my favorite! Everything cooks in one pan and is served over fluffy rice for a meal that’s ready in 30 minutes or less. I love that they have 46 grams of protein and taste restaurant-worthy, but are so easy to make at home! ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Comment “RECIPE” to save this to your DM’s! ✨ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Chicken 1 1/2 pounds chicken breast 1 teaspoon garlic powder 1 teaspoon smoked paprika 1/2 teaspoon cumin 1/2 teaspoon salt 1/4 teaspoon pepper pinch of chipotle powder optional but so good! 1 Tablespoon avocado oil 1/2 teaspoon honey 1/2 Tablespoon lime juice freshly squeezed ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Street Corn 1 1/2 cups frozen corn preferably grilled or roasted pinch of salt 1/4 teaspoon ancho chili powder 1/2 cup plain Greek yogurt or mayo 3 Tablespoons freshly squeezed lime juice zest of 3/4 lime 1/4 cup red onion finely diced 1/4 cup green bell pepper or jalapeño optional, finely chopped 1/3 cup cotija cheese 1/3 cup cilantro chopped ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Bowls 2 cups cooked rice 1 medium avocado sliced ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Cube the chicken breast and mix with the garlic, smoked paprika, cumin, salt, pepper, and chipotle. Heat the avocado oil in a skillet over medium-high heat, and cook the chicken until it starts to brown a little, about 5-6 minutes. While the chicken cooks, zest the lime for the street corn and set aside. Add the honey and lime juice to the chicken, then cook for another 5-6 minutes until the juices thicken and the chicken is fully cooked. Remove the chicken from the pan and keep warm, save any juice left from the pan in a small container. In the same skillet (dry), lightly sauté the corn over medium-high heat with salt and chili powder until warm and lightly browned for about 1 min. Meanwhile, whisk the yogurt, lime juice and lime zest together in a medium bowl. Add in the red onion, green bell pepper (or jalapeño), cotija cheese, cilantro, and cooked corn. No phone signal, completely disconnecting, sunsets and s’mores in the dessert. This is exactly what my soul needed ✨ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Big Bend + Marfa + West Texas ⠀⠀⠀⠀⠀⠀⠀⠀⠀ I told Cody I would do this exact trip again in a heartbeat! Even though it was absolutely wild with the kids, we made the sweetest memories and it was such a unique experience. Planning on writing a Substack post soon with details about where we stayed, everything we ate, everywhere we went, and all the things!

I’ve been making this recipe for years and still can’t get over the perfect texture and sweet chocolatey oat goodness. They’re soft, slightly chewy, and made with wholesome ingredients. I love making a big batch of these and keeping them on hand for quick grab-and-go breakfasts throughout the week or even for school lunchboxes and meal prep! ⠀⠀⠀⠀⠀⠀⠀⠀⠀ >> Comment “RECIPE” to save to your DM’s! ✨ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ▢ 1/2 cup whole milk greek yogurt ▢ 1/3 cup creamy almond butter ▢ 2 large eggs ▢ 2 Tablespoons refined coconut oil (melted) ▢ 1/2 cup maple syrup ▢ 1 Tablespoon vanilla extract ▢ 2 teaspoons ground cinnamon ▢ 1 3/4 cup rolled oats ▢ 1/4 cup finely ground almond flour ▢ 1/2 cup sliced almonds (or chopped walnuts) ▢ 1/4 cup mini chocolate chips (or mini white chocolate chips) ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Preheat the oven to 325°F and line a 8-inch x 8-inch baking pan with parchment paper. CREAMY LEMON PROTEIN PASTA 🍋 That takes minutes to make, is high-protein, and SO flavorful! #ad I made this with @aldentepastaco and cannot get over the texture and how perfectly it cooks 🙌🏻 With 30 grams of protein per serving and protein derived from cage-free eggs, it’s so good in this creamy lemon sauce. This is one of those easy dinners I could easily make every day! ⠀⠀⠀⠀⠀⠀⠀⠀⠀ 10 ounces Al Dente Pasta (Code: “CHRISTINE” to buy 3 bags and get 1 free!) 2 Tablespoons olive oil 1 medium shallot 1 Tablespoon minced garlic 1/4 cup lemon juice 1/2 teaspoon crushed red pepper 1-2 teaspoons lemon zest 1 cup whole cherry tomatoes 4 ounces cream cheese 3/4 cup plain Greek yogurt 1/2 teaspoon salt 1/2 teaspoon black pepper 1/2 cup grated parmesan cheese chopped parsley (to taste) ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Cook the pasta according to the directions. Save 1/4 cup of the pasta water, drain the pasta. Meanwhile, add olive oil, chopped shallot, and garlic in a large pan with high sides over medium heat. Cook for 2-3 minutes, then add in lemon juice, red pepper, lemon zest, and tomatoes. Cook for another 2-3 minutes, just until the tomatoes begin to soften. Stir in the cream cheese, mixing it until it melts. In a separate bowl, slowly add pasta water to yogurt while whisking quickly. Lower the heat, then slowly pour yogurt mixture and salt/pepper into the sauce, quickly whisking for about 5 minutes. Remove from heat and mix in the pasta.
