SCOOPABLE MANGO COCONUT CHIA PUDDING // because finding ways to make breakfast easier has been everything for me lately. i love having chia pudding prepped for those healthy fats and fiber and this thick and creamy texture makes me feel like i’m eating dessert for breakfast. i am hooked and i can’t stop making flavors! any flavor you want to see next? LMK!! COMMENT RECIPE FOR THE FULL RECIPE ON MY BLOG! Pudding Ingredients ½ cup chia seeds ¾ cup plain Greek yogurt 1 cup milk of choice (coconut milk is preferred) 1¼ cups mango chunks (about 1 large ripe mango, fresh or frozen) ¼ cup unsweetened shredded coconut ½ cup coconut cream ((solid part from can)) 3 tablespoons maple syrup (can sub honey) 1 teaspoon vanilla extract Pinch of salt Toppings (optional) Greek yogurt dollop diced mango toasted coconut flakes honey drizzle lime zest In a blender, add the milk, mango, shredded coconut, maple syrup, vanilla, and a pinch of salt. Blend until completely smooth and bright. Add the coconut cream to the blender and blend again briefly, just until combined. In a medium bowl, add the Greek yogurt. Pour in the mango coconut mixture and whisk until fully smooth. Stir in the chia seeds. Let sit for 5 minutes, then stir again to prevent clumping. Cover and refrigerate overnight, until thick and scoopable. OK so you guys know that my cheesecake jars are my number one… but lately this chocolate mousse has been getting a lot of attention. IT’S SOOO GOOD. It’s rich, creamy, chocolatey, packed with protein, and takes all of 5 minutes to make. say it with me... the ground beef fatigue ends today. 😂 LOL. if you’ve been stuck in the “what am I supposed to make with this pound of ground meat?” cycle… well this Philly cheesesteak skillet is your answer. it’s loaded with flavor, comes together in one pan, under 30 minutes, and is finished with a creamy cottage cheese cheese sauce that takes it over the top. SOOO GOOOD! 10/10 RECOMMEND TRYING IT. Comment RECIPE and I’ll send you the full details on my blog or you can visit www.lovelydelites.com at the link in my bio! don’t forget to SAVE this one TAG me when you try it and FOLLOW along for more delicious ways to use that ground meat LOL. https://lovelydelites.com/philly-cheesesteak-skillet-with-cottage-cheese-sauce/ Cheesesteak Skillet 1 lb lean ground beef (I used 93% lean) 1 green bell pepper (thinly sliced) 1 red bell pepper (thinly sliced) 1 small yellow onion (thinly sliced) 8 oz cremini mushrooms (sliced) 2-3 cloves garlic (minced) 1.5 tbsp Worcestershire sauce 2-2½ tsp homemade steak seasoning (from above) High-Protein Cheese Sauce 3/4 cup cottage cheese (blend until smooth) 1/2 cup provolone cheese 1/2 tsp garlic powder pinch salt + black pepper Heat a large skillet over medium-high heat. Add ground beef and break it apart. Sprinkle 1–1½ tsp steak seasoning over the beef. Let cook undisturbed for 1–2 minutes, then continue cooking until browned, about 5–7 minutes. Add sliced mushrooms, onions, and peppers directly into the skillet. Cook for 6–8 minutes, stirring occasionally, until mushrooms release their moisture and start to brown and veggies are soft and slightly caramelized. Add remaining ½–1 tsp steak seasoning and stir. Then, add garlic and cook for 30 seconds. Pour in Worcestershire sauce and mix well. Let everything cook together for 1–2 minutes. Blend cottage cheese until completely smooth. Add to a small saucepan with cheese and seasonings. Heat over low heat, stirring constantly until melted and creamy Drizzle cheese sauce over skillet, mix everything together and enjoy! #groundmeat #whatsfordinner #mealprepping #phillycheesesteak #healthyrecipes

#ad Measure garlic with your heart, measure cheese with your heart…but maybe don’t measure baking powder that way. 😅 I accidentally grabbed the wrong measuring cup the other day (thank you terrible eyesight) and the recipe did not survive. Between recipe testing, BLW lunches, and cooking with one hand, contacts have been a part of my daily routine this year. BLUEBERRY OATMEAL BARS 🫐✨ this is that same recipe that i shared on my stories a few months ago and you guys raveddd about it! it technically started as a baby-friendly breakfast for emery and now it’s a full family obsession. they are so soft, naturally sweetened with banana, packed with blueberries, and made with simple ingredients all in one bowl, hallelujah! Comment RECIPE and I’ll send you the recipe 💙 https://lovelydelites.com/blueberry-banana-oatmeal-bars-no-added-sugar/ 2 ripe bananas (mashed) ½ cup Greek yogurt 1 tsp vanilla extract ¼ cup milk of choice 1 cup oat flour 1 tsp baking soda 1 tsp cinnamon 1 cup fresh blueberries Preheat oven to 350°F and line an 8×8 or 9×9 baking dish with parchment paper. In a large bowl, mash the bananas until mostly smooth with little to no chunks remaining. Add in the Greek yogurt, vanilla extract, and milk. Stir until well combined. In a separate bowl, whisk together the oat flour, baking soda, and cinnamon. Add the dry ingredients to the wet ingredients and gently mix until just combined. Fold in the fresh blueberries. Pour the batter into the prepared baking dish and spread evenly. Bake for 25 minutes, or until a toothpick inserted into the center comes out clean. Be sure to SAVE this one and TAG me when you try!! https://lovelydelites.com/cookie-dough-overnight-oats-with-greek-yogurt/ cookie dough oats— 2 cups rolled oats 1 cup plain Greek yogurt 1 3/4 cups milk of choice 1/4 cup maple syrup 2 tbsp almond butter 2 tsp vanilla extract 2 tbsp chia seeds 2 tbsp ground flaxseed Pinch of salt 1/4 cup chocolate chips (I used @hukitchen) Mini Protein Cookie Dough Balls— 1 tbsp vanilla protein powder (I used @Ritual) 1 tbsp almond butter (or peanut butter) 1-2 tsp maple syrup 1/4 tsp vanilla extract Pinch of salt 1-2 tsp mini chocolate chips 1-2 tsp milk of choice (as needed) In a large bowl, whisk together yogurt, milk, maple syrup, almond butter, vanilla, and salt until smooth. Stir in oats, chia seeds, flaxseed, and chocolate chips. Cover and refrigerate overnight (or at least 2–3 hours) until creamy and set. BEST overnight for a thick texture. to make the protein balls- add all ingredients into a bowl and stir until a dough forms. Depending on protein powder used you may need to add milk, a few drops at a time, until it comes together. Form into 5–7 small balls. Pop in the fridge for 5–10 minutes. PEACHES N CREAM CHIA PUDDING. 🍑 The next flavor on my chia pudding lineup! you guys have been loving these as much as I do. This peaches flavor is BEYOND. it’s naturally sweetened with peaches and a touch of maple syrup. I cooked the peaches down before blending with the milk because it actually makes the peach flavor so much more prominent. CARROT CAKE COTTAGE CHEESECAKE JARS! 🥕✨ // I put a poll up a few weeks ago asking you guys which type of carrot cake cheesecake jar you wanted and although it was a pretty close tie, the majority of you said you wanted a carrot cake cheesecake combo… so here we are ;) Comment RECIPE and I’ll send you everything you need to make them! These have layers of soft no-bake carrot cake with my signature creamy cheesecake filling and they are SOOO GOOD. Let me know if you try!! 1 cup finely grated carrots 1 cup almond flour 6-8 Medjool dates 1/4 cup unsweetened applesauce 2 tbsp maple syrup 1 tsp cinnamon 1/4 tsp nutmeg 1/2 tsp vanilla extract Pinch of salt 2 tbsp tbsp chopped walnuts 2 tbsp raisins 1 cup cottage cheese (Good Culture for best texture) 1/2 cup Greek yogurt (Fage 0% but any works) 2-3 tbsp maple syrup 1 tsp vanilla extract In a food processor, add dates, applesauce, maple syrup, and vanilla. Blend until smooth and sticky. Add in almond flour, spices, salt, and grated carrots. Pulse until it forms a soft, slightly sticky dough—should be scoopable, not dry!! Fold in chopped nuts and raisins last. Clean out the food processor and add in the cottage cheese, Greek yogurt, maple syrup, and vanilla and blend until completely smooth and creamy. Note, you can use a blender for this step but it tends to make the cheesecake more watery than a food processor. Assemble the jars in small jars or glasses Add a layer of carrot cake mixture (press lightly). Use a paper towel to clean off the jar.
