You could say my stubbornness is what started butternut bakery. Working a desk job felt so restrictive, even on day one, so I knew it wasn’t the path for me. It took 2 years of nonstop work. Yes, I make my own birthday cake but that’s because I absolutely love it and can make whatever I want! Like when I’m craving…pudding? I think as a society we’re all underestimating the power of pudding and I’m willing to be the champion for it. To replicate this INCREDIBLE dessert, here’s what you need: I used my Moist Chocolate Cake recipe, but use whatever cake you got! Chocolate Pudding 1/2 cup granulated sugar 1/4 cup cocoa powder + more for dusting 2 tbsp cornstarch 1/4 tsp kosher salt 1 1/4 cups whole milk 1 tsp vanilla extract 3/4 cup semisweet chocolate chips 1 1/2 cups heavy whipping cream 1/2 7 oz jar marshmallow fluff In a medium saucepan, whisk together the sugar, cocoa powder, cornstarch, and salt. Slowly whisk in the milk until smooth, then whisk it all in. Place over medium heat and whisk until it just starts to bubble and thicken, 5 to 8 minutes. Remove from heat and whisk in the vanilla and chocolate until smooth. Pour into a bowl and cover the surface with plastic wrap. Chill for 30 minutes. In the meantime, whip the heavy cream on high speed just until it starts to thicken slightly, about 2 minutes. Scoop in the marshmallow and continue to whip until you reach firm peaks, about 30 seconds. Fold half of the whipped cream into the cooled pudding. Layer pudding, cake, pudding cake, then finish with the rest of the whipped cream. Dust with cocoa powder and chill for at least 4 hours or overnight. Enjoy!
