Guys, I wrote a book 📕 🥹 Where do I start? This book was actually released a year ago whilst I was in hospital. So unfortunately I didn’t get to enjoy it one bit. RECIPE BELOW👇🏽 It does not get much easier and tastier than this sweet potato loaf cake recipe… Just 5 ingredients SO EASY SO TASTY! Enjoy! DB x INGREDIENTS ▪️2 medium sized sweet potatoes ▪️1/3 cup coconut oil ▪️1/3 cup maple syrup ▪️2 eggs ▪️1 1/2 cups self-raising flour ▪️Chocolate chips (optional) METHOD ▪️Preheat your oven to 180c ▪️Cook your sweet potatoes until soft - microwave/roast/boil ▪️Once your sweet potatoes are cooked, mash them. Add the remaining ingredients and mix well until incorporated. ▪️Pour into a prepared loaf tin. DB x INGREDIENTS ▪️200g chocolate, melted ▪️4 Medjool dates ▪️2 tbsp peanut butter ▪️Handful of pumpkin seeds, pecans and pistachios (swap with whatever you have) METHOD ▪️In a prepared loaf tin pour half of the melted chocolate and spread evenly. ▪️Slice your dates in half, and remove the pit ▪️Place them in the chocolate ▪️Spread peanut butter on top ▪️Sprinkle on your nuts and seeds ▪️Cover with the remaining chocolate ▪️Top with pistachios and freeze until set #dates #healthyrecipes #easyrecipes #peanutbutter #healthysnacks #recipe

INGREDIENTS ▪️2 eggs, beaten ▪️1 large wrap ▪️Handful of spinach ▪️Handful of chopped red onion ▪️Cheese ▪️1 tbsp cottage cheese ▪️4 cherry tomatoes, halves ▪️1 spring onion, chopped METHOD ▪️Heat some oil in a pan over medium-high heat ▪️Once oil is hot, add beaten eggs ▪️Let egg cook for 30 seconds then place a wrap on top. Cook for a few minutes then flip over ▪️Once your egg is cooked, remove from heat. DB x INGREDIENTS ▪️1 can of chickpeas, rinsed and drained ▪️1 tsp cinnamon ▪️1 tbsp oil ▪️150g chocolate, melted Toppings: cranberries, pistachios (optional) METHOD ▪️Preheat oven or air fryer to 180c ▪️Dry the chickpeas thoroughly with a paper towel ▪️Add chickpeas to a prepared baking tray and mix in the oil and cinnamon ▪️Bake for 35-40 minutes, mixing every 20 minutes. ▪️Whilst the chickpeas are cooling, melt the chocolate in a bowl. ▪️Add chocolate to chickpeas and mix well ▪️Scoop out 1 tbsp of this mixture and add to a prepared baking tray. Plus it’s incredibly easy to make, and you can make the sauce ahead of Christmas Day to make your life easier. ENJOY! DB x INGREDIENTS Dressing: ▪️5 tbsp yoghurt ▪️2 tbsp mayonnaise ▪️150g vegan bacon lardons ▪️1 tbsp jalepenos, chopped ▪️Salt and pepper to taste For Brussels sprouts: ▪️750g Brussels sprouts ▪️Chilli flakes, salt and pepper (to taste) ▪️1 tbsp oil METHOD ▪️Preheat oven to 200c ▪️Boil sprouts until fork tender ▪️Drain sprouts and pat dry with some paper towels ▪️Transfer the Brussels sprout to a prepared tray and with the base of a mug/glass gently flatten each sprout. ▪️Drizzle over some oil, and season. Toss to coat and then spread into an even layer ▪️Roast for 20 minutes, then turn sprouts over and roast for a further 10-15 minutes or until golden and crispy ▪️Whilst the sprouts are cooking, fry the bacon lardons until crispy. ▪️Mix dressing ingredients together and then add the sprouts.
