Welcome to episode 1 of All Things Greek, a series where I’ll be going back to my Greek roots and sharing all of the recipes I grew up with. These are the recipes that shaped who I am as a cook today, and let’s be honest, who doesn’t love Greek food?! 🇬🇷🔥 I’m kicking things off with an easy recipe I make all of the time – Hot Pepper Feta Dip! It’s creamy, salty, a little spicy and SO GOOD. You can enjoy it as a dip with pita, olives and herbs, or use it as a spread for sandwiches, a condiment for your favorite protein and so much more. You only need 8 ingredients and it comes together in just a few minutes. Bookmark the RECIPE and tag us if you make it! 🌶🧀HOT PEPPER FETA DIP 250-300g feta cheese plus more for garnish 1x red chili pepper or jalapeno (keep seeds in the pepper for a spicier dip) 10-12 oz jar roasted red peppers, drained 1x garlic clove 2 tbsp olive oil 1 tbsp red wine vinegar 1-2 tbsp fresh parsley ½ cup Kalamata olives Pita bread for serving Add the feta to a food processor and pulse to break down into quite fine / small pieces. Add the chili pepper, drained roasted red peppers, garlic clove, olive oil and red wine vinegar and run the food processor on high until the dip is fully combined until smooth. Transfer to a low plate or bowl and garnish with parsley, olives, leftover crumbled feta cheese and drizzle with olive oil and serve with fresh or toasted pita bread. Here is the recipe for my epic Arugula Salad: For the grape, arugula & lemon salad 3 tbsp olive oil ¼ tsp chili flakes 1 garlic clove, thinly sliced peel from 1/2 a lemon, cut into thin strips ¼ cup white mediterranean wine 2 tsp dijon mustard 3 tsp honey 4 tbsp slivered almonds 1 tsp kosher salt ½ tsp ground pepper 5 oz (about 5-6 packed cups) fresh arugula 1 cup red or black grapes, halved To a frying pan add 3 tbsp olive oil over medium heat. Once the oil is warm, add the sliced garlic, chili flakes, thin strips of lemon peel and cook for just a few minutes until it’s fragrant and the garlic starts to just turn golden brown. Add the wine to deglaze the pan and cook it down a few minutes until about half of the wine is cooked off. Remove from the heat. Add the ingredients from the pan to a blender along with dijon mustard, honey, slivered almonds, kosher salt and ground pepper. Blend until smooth and combined. Taste and adjust with salt and pepper if desired. Set the dressing aside. Childhood shapes us more than we realize. Ya, it’s psychology, but also nostalgia. Every summer in Greece, I watched my grandmother cook without measuring cups, without timers, without recipes. Just intuition, habit. She gardened without calling it organic. She harvested without calling it seasonal. And, she cooked without calling it healthy. It was simply how she lived. Greek food is simple, with real ingredients, olive oil, vegetables, legumes, herbs, fresh meat and fish. And somehow, without overcomplicating anything, it nourishes the body deeply. Looking back, I realize it was a privilege to witness those ancestral ways in action, to see intuition work in real time. Looking back, I understand how much those summers shaped me. This Greek braised beef with my famous Greek lemon potatoes is pure Sunday comfort. Slow-roasted, bathed in lemon and garlic, and all made in one pan, it’s the kind of dish that fills your kitchen with the aromas I grew up with. Bright, tender, and deeply nostalgic, this is what I make when I need a little taste of home. Full recipe below 🤍🍋 2.5-3 lbs boneless beef chuck roast @diamondcrystalsalt and ground pepper 1 tbsp extra-virgin olive oil (only ever using JUICE) 5 large garlic cloves, smashed 3-4 shallots, thinly sliced (about 2 cups sliced) 680 grams (1.5 lbs) whole baby potatoes ¼ cup white wine 1 tsp lemon zest 1 tsp dried oregano ½ tsp dried thyme 2 bay leaves ½ tsp ground pepper ½ tsp kosher salt ¼ cup lemon juice 3 cups chicken broth, 3 tsp @betterthanbouillon Chicken Base with 3 cups water 2 small vines of cherry tomatoes For serving slices of lemon 4-6 pieces of feta cheese fresh chopped dill fresh chopped parsley Preheat the oven to 325F. Pat the beef chuck roast dry with a paper towel. Season generously with kosher salt and ground pepper on all sides. To an oven-safe dutch oven, add 1 tbsp extra-virgin olive oil over medium-high heat. When the oil is hot, sear the beef until golden brown on all sides, about 3-4 minutes per side. Remove the beef to a plate and set aside. Turn to medium heat and add the smashed garlic and sliced shallots. Cook, stirring occasionally, until the shallots are tender, about 5 minutes. Add the lemon zest, dried oregano, dried thyme, bay leaves, ground pepper and kosher salt. Cook and stir until fragrant, about 1 minute. Add the wine to deglaze the pan, scraping any browned bits from the bottom of the pan and stirring / cooking until most of the wine has evaporated. Then add the lemon juice and chicken broth and stir to combine. Nestle the seared beef into the pot along with any juices from the plate.
