LAZY PASTA (20-minute dinner)🍝🫶🏼follow @healthygirlkitchen for more!! Ingredients: 3 tbsp olive oil 3 cloves minced garlic 1 zucchini, diced 2 cups baby Bella mushrooms, diced 1 24 oz jar marinara sauce 12 oz pasta of choice Water to just cover the pasta Season with salt and pepper to taste Baby spinach - throw in a few handfuls at the end Garnish w dairy-free parmesan How to: 1. Prep + chop veg. 2. In a pot/large pan on medium heat saute garlic in olive oil for a few minutes then add in the onion, zucchini and mushrooms and saute for 4 minutes. 3. Add in the pasta, 1 jar marinara sauce and water to cover the pasta (make sure its JUST covered). 4. Cover with a lid and cook for 10-15 minutes. (Stir every 3-4 minutes). 5. Once its done stir in baby spinach and top with parmesan cheese. 6. Enjoy!! #healthyrecipe #pasta #onepot #momlifestyle #dinner

Caesar salad dip recipe: 1 head romaine lettuce, micro chopped 1 head kale, micro chopped 1 cup toasted gluten-free panko breadcrumbs (toasted in olive oil and salt in pan on medium heat for 5 min, stirring every 30 seconds) 1/2 cup shredded Parmesan (I use vegan Parmesan) Dressing: 1 cup cream cheese I use @kitehillfoods 1/2 cup @kitehillfoods yogurt unsweetened 2 tbsp olive oil 1/3 cup chopped capers 1 tbsp nutritional yeast 2 tbsp lemon juice 1/2 tsp garlic powder 1 tsp red or white miso paste 2 tsp Dijon mustard *whisk all dressing ingredients in bottom of a bowl then add the greens and the rest of the ingredients and mix well! Protein: pick a protein to keep you full Starch or warm veggie Fresh veggies: 1-2 veggies for crunch, crispness and freshness Nuts/seeds: adds CRUNCH, texture and healthy fats! Cheese or fat: adds creaminess or saltiness (like a feta or avocado or both!) Dressing: pulls it all together! Bonus: fresh herbs like dill, parsley or cilantro The secret to making a salad yummy is combining different textures, flavors and a delicious dressing BUT a perfect salad in my opinion is also a filling salad that can keep you going and give you energy and fuel. Including all of these elements in a salad helps to make it a complete meal. Extra tips: 1. Massage your kale if you’re not finely shredding it like me 2. Make dressing in bottom of the bowl to avoid dirtying an extra dish 3. Recipe: - 3 tbsp olive or avocado oil - half yellow onion, diced - 3 cloves minced garlic, - 1 cup celery, diced - 1 red bell pepper, diced - 1 cup mushrooms, chopped - 1.5 cups dry green lentils - 2 cups chopped kale - 2 tbsp tomato paste - handful chopped parsley (add at the end) - 7 cups water or broth - 1 tsp turmeric, 1 tsp black pepper, 2 tsp salt, 1 tsp oregano, 1 tsp, 1/2 tsp paprika, 1/2 tsp cumin, 1 tsp thyme How to: 1. In large soup pot, saute onion and garlic in oil for a few minutes on medium heat. 2. Next, add in the celery, mushrooms, and pepper. Saute for 15 minutes. 3. Add in lentils, kale, tomato paste and broth. 4. Stir well, bring to boil. Cover and reduce to low heat. Cook for another 20 until lentils are soft. 5. Serve with crusty sourdough!
