Ingredients: 3 tbsp olive oil 4 cloves minced garlic 1/2 yellow onion, diced 3 cups cherry tomatoes 1 cup Kalamata olives 3 tbsp capers 1 tbsp caper brine 8 oz angel hair or any pasta you have! Water 3 cups Garnish with 1/2 cup chopped parsley and Parmesan I use dairy free parm. 1. In large nonstick pot saute garlic and onion in olive on medium heat for 3 minutes then add in the tomato, olives and capers! 2. Stir and cover for 10 minutes. 3. Add the pasta directly to the pot and cover with water just submerging it. 4. Gently combine and stir every few minutes until the water is absorbed by the pasta and the pasta is al dente. 5. Enjoy! ONE POT ENCHILADA RECIPE 🥘(15-minute dinner!!) follow @healthygirlkitchen for more :) My take on deconstructed enchiladas! What ya need: 2 tablespoon olive oil half yellow onion diced (sauté for 2 min first) 1 can black beans 1 beefsteak tomato, diced 1 red bell pepper, diced 1 ear of corn, cut off the cob (or use 1 cup frozen) 1 jar of 15 oz enchilada sauce (I used @sietefoods ) 1 tsp chili powder 1 tsp smoked paprika 1 tsp cumin 1 cup rice 2 cups veggie broth 1 cup water Garnish: Cashew sour cream (recipe on healthygirlkitchen dot com) Cilantro 1. In a large nonstick pot, saute onion in the olive oil for a few minutes then add the rest of the ingredients to the pot. Stir together well. 2. Bring to a boil then turn down the heat to low medium. Cover and stir every 2-3 minutes until the rice is cooked and the liquid is absorbed! (Use an instant pot if you want a hands off method) 3. Garnish with sour cream and cilantro! Ingredients: 3 tbsp olive oil 1 bell pepper 1 sweet potato, peeled + cubed 1/2 yellow onion, roughly chopped 1.5 cups raw cashews 1 large carrot, sliced 1 head garlic, cut in half — 1 tbsp white miso paste 2 tsp salt 1 tsp pepper 1 pinch cayenne (skip if you don’t want spicy) 1 pinch nutmeg 3 tbsp nutritional yeast 2 cups unsweetened soy milk Extra: 16 oz pasta (I use @goodles protein noodles) How to: 1. Preheat oven to 350 degrees F. 2. Add these ingredients into a 9x13 roasting pan and coat in olive oil and mix to combine (salt and pepper to taste). 3. Roast for 30 - 40 minutes until potatoes are fork tender. Squeeze garlic out! 4. In the last 10 minutes of roasting, boil pasta water, chop broccoli and add it to the pasta. 5. Add to a blender with the rest of the sauce ingredients. I use a high speed blender like a vitamix. Blend until smooth. 6. Pour over noodles + broccoli and enjoy.
