Ep. 6: 30 minute meals with over 30g protein: Marry Me Chickpea Orzo (recipe below!) using @tibatempeh AD Tiba tempeh is the GOAT of all supermarket tempeh (It’s actually been voted the No. 1 tempeh in the UK!), not bitter, easy to cook with, and crisps up real nice. Grab yours from Sainsburys, Tescos, Morrisons, Lidl, Ocado or Abel and Cole. Ingredients (serves 3) Takes 30 minutes 200g Tiba Tempeh, torn/crumbled into small pieces 1 tbsp tamari 1/2 tsp garlic granules (sub onion granules) 1 shallot or half a white onion, finely chopped 5 cloves garlic, minced 1 tsp smoked paprika ½ tsp turmeric 1 tsp dried thyme 100g sundried tomatoes, from a jar in oil, drained and roughly chopped 120g orzo pasta 800ml vegetable stock 120g fresh spinach, roughly chopped 300g silken tofu Juice of one lemon 3 tbsp nutritional yeast 1 small handful of fresh basil leaves, roughly torn. 240g cooked chickpeas, from a jar or can, drained weight Method Preheat your oven to 200c fan. Start with the tempeh. Grab a roasting tray, then, with your hands, crumble it into small pieces, directly onto the tray. Drizzle over some olive oil, the tamari, the garlic granules, and a small pinch of sea salt. Give that all a good toss together, then flatten into an even layer and bake for 16-18 minutes, or until the tempeh is golden in colour and crisping up at the edges. In a large casserole pan or saucepan for which you have a lid, fry the shallot on a low heat, in plenty of olive oil with a pinch of sea salt, for 5-6 minutes, then add the garlic, smoked paprika, turmeric, and dried thyme. Hidden Bean Pasta (updated super green pasta) 43g protein per serving! Recipe below 👇 save for later! Serves 2 Takes 20 minutes Ingredients 1 shallot or half a white onion, finely chopped 4 garlic cloves, minced 150g kale, de-stemmed and roughly chopped 30g fresh basil leaves 3 tbsp nutritional yeast Juice of one lemon 240g canellini beans, from a jar or can, drained and rinsed 200g dried pasta of choice TOFU FETA 150g extra firm tofu 1.5 tbsp lemon juice 2 tbsp nutritional yeast 1 clove garlic, crushed ½ tbsp oregano 1 tsp olive oil ½ tsp sea salt Freshly cracked black pepper 1 tsp chilli flakes (optional) Method Start by making the tofu feta by crumbling the extra firm tofu into small pieces (around 1-1.5cm or smaller) into a mixing bowl, then adding the rest of the ingredients listed above. Combine well, season to taste, then leave in the fridge until ready to serve. In a small frying pan, fry the shallot in olive oil with a pinch of sea salt for 5 minutes, then add the crushed garlic and fry for a further 2 minutes, before taking off the heat and allowing it to cool. Boil a full kettle’s worth of water (for blanching the kale), and put the pasta onto boil in plenty of salted water, for one minute less than the packet suggests. Quick blanch the kale by popping it into a sieve, running the kettle of boiling water over it, then immediately running the cold tap over it and squeezing out the water. I get asked “why do you use so much olive oil” on an almost daily basis, which is grounded in a fear of weight gain. Fat isn’t the enemy, yet we’ve been brainwashed by years of marketing to believe so (who knows, maybe they don’t want us to think for ourselves 😉🤣) & whilst focusing on weight loss isn’t inherently bad, these outdated myths are harming our health. No one is saying go and strawpedo a bottle of olive oil, but cooking healthy foods in it is a fantastic way to ensure your body actually absorbs that goodness. What do you think?
