The very first copy of my new book!!! 😭😭 It's so pretty, I can't believe I finally got to hold it – it felt like an out-of-body experience. I've been working on it for over two years and I'm so proud of how it's turned out – and I can't wait for it to be out in the world and in all of your kitchens!!! It's also HUGE 😂😂 It weighs a whopping 1.9kg or just over 4lb!! The original manuscript was about 165,000 words (for reference, that means it was longer than the 2nd and 3rd Lord of the Rings book, and only slightly shorter than the 1st one 😳) but we managed to cut it down to a more manageable length... eventually. And every single page is packed full of useful info, tips, recipes and mouthwatering photos. In fact, this book contains some of THE BEST recipes I've *ever* developed!!! Oh, and the table of contents LOOKS LIKE THE PERIODIC TABLE which makes me irrationally happy. 🤓😁 The Elements of Baking comes out this fall and all the preorder links are in my bio – and it's currently discounted with quite a few retailers! Here’s a little sneak peek of some of the recipes from my new book!! It’s honestly impossible for me to pick a single favourite – because the whole book is filled with my favourites! 🤤🤌 The second photo really shows what The Elements of Baking is all about: using the modification rules, you can go from a regular chocolate chip cookie recipe to a gluten-free, a dairy-free, an egg-free, a vegan or even a GF vegan one – and the cookies will always taste SPECTACULAR, no matter which ingredients you eliminate. And the rules don’t cover just cookies, they also cover cakes, cupcakes, muffins, brownies, pancakes, pastry and more. That means that if you’ve been missing a favourite recipe because you can no longer eat gluten or eggs or dairy, my book will help you to adapt it so you can enjoy it again!! The book also includes 140 recipes, and the majority are completely new, never seen before recipes!! These are honestly more blueberry than muffin 😅😂 but that's what makes them PERFECT. Listen, if I'm making blueberry muffins, I want *a lot* of blueberry goodness in every single bite – and these definitely deliver. The slightly thicker batter ensures that the blueberries stay evenly distributed throughout the muffins (no sinking berries here!!) and the end result are gloriously tall, bakery-style, streusel-topped and perfectly soft and moist blueberry muffins. These ciabatta rolls are THE EASIEST gluten-free bread recipe I've ever shared. They don't require any shaping, you just roll out the dough into a large rectangle, cut it into 6 pieces, proof and bake. That's it!! Officially the softest gluten-free flatbread I've ever made, it's even softer than my gluten-free naan, and I really didn't think that was possible!!! 😭🤤 The dough comes together in minutes, it handles beautifully, you can use either riced potatoes or leftover mashed potatoes to make it, and because it's a yeast-free recipe you don't need to wait for it to proof 🙌 And the flavour is INCREDIBLE, I seriously can't get enough of it. Strawberry lovers, this one's for you 🍓 Crisp, buttery almond shortbread, a layer of creamy vanilla cheesecake and lots of sweet, juicy strawberries – these are INCREDIBLE and they seriously couldn't be easier to make!! Soft, buttery lemon cake and a layer of juicy, jammy blueberries – because while blueberries don't make the prettiest upside down cake, they definitely make the most delicious one 🫐🤤 You don't even need to make a caramel: the natural juices from the blueberries combine with the sugar to create this amazing sticky blueberry syrup 🤌 The whole thing is sooo easy to make, and I definitely recommend serving it with a dollop of lightly sweetened vanilla whipped cream on top.
