The very first copy of my new book!!! 😭😭 It's so pretty, I can't believe I finally got to hold it – it felt like an out-of-body experience. I've been working on it for over two years and I'm so proud of how it's turned out – and I can't wait for it to be out in the world and in all of your kitchens!!! It's also HUGE 😂😂 It weighs a whopping 1.9kg or just over 4lb!! The original manuscript was about 165,000 words (for reference, that means it was longer than the 2nd and 3rd Lord of the Rings book, and only slightly shorter than the 1st one 😳) but we managed to cut it down to a more manageable length... eventually. And every single page is packed full of useful info, tips, recipes and mouthwatering photos. In fact, this book contains some of THE BEST recipes I've *ever* developed!!! Oh, and the table of contents LOOKS LIKE THE PERIODIC TABLE which makes me irrationally happy. 🤓😁 The Elements of Baking comes out this fall and all the preorder links are in my bio – and it's currently discounted with quite a few retailers! Here’s a little sneak peek of some of the recipes from my new book!! It’s honestly impossible for me to pick a single favourite – because the whole book is filled with my favourites! 🤤🤌 The second photo really shows what The Elements of Baking is all about: using the modification rules, you can go from a regular chocolate chip cookie recipe to a gluten-free, a dairy-free, an egg-free, a vegan or even a GF vegan one – and the cookies will always taste SPECTACULAR, no matter which ingredients you eliminate. And the rules don’t cover just cookies, they also cover cakes, cupcakes, muffins, brownies, pancakes, pastry and more. That means that if you’ve been missing a favourite recipe because you can no longer eat gluten or eggs or dairy, my book will help you to adapt it so you can enjoy it again!! The book also includes 140 recipes, and the majority are completely new, never seen before recipes!! GLUTEN-FREE PITA BREAD!! It puffs up every single time, it tastes AMAZING, and it's super easy to make – it's ready start to finish in about 45 minutes!! 🙌 I love this recipe sooo much, I genuinely make these *at least* 2-3 times per week. The key to getting them to puff up is to roll them to just the right thickness (about 5mm or just under ¼ inch), let them proof on the counter for about 15 minutes, and then cook them on high heat (but play around with the heat to see what works best for your stove). 💛 Full recipe is on my blog, link in my bio!! #pita #pitabread #flatbread #glutenfree #vegan

Just pure buttery, blueberry packed deliciousness – I swear I nearly polished off the entire tray, they're SOOO GOOD 😅🤤 They're perfectly moist (no sad, dry scones here!!) and soft without being too cakey or too crumbly. And they have the most perfect crisp, caramelised edges. GLUTEN-FREE NAAN!! It's sooo soft and pillowy, with just the right amount of chewiness, and it puffs up beautifully during cooking 🤤 And because it's a yeast-free version with baking powder, it's ready in about 45 minutes!! 🙌 You can also make it dairy-free/vegan by replacing the yoghurt in the dough with a vegan yoghurt, and brush it with melted vegan butter. Soft, buttery lemon loaf with a poppy seed swirl and a tangy lemon icing – this is INCREDIBLE 🍋🤤 Grinding the poppy seeds into a powder *hugely* intensifies their flavour, this is seriously the only way I'll make lemon poppy seed cake from now on. These are honestly more blueberry than muffin 😅😂 because I just kept on stuffing more and more blueberries into them – and the end result is PERFECT. They're sooo soft, moist and tender, you get plenty of blueberry deliciousness in every single bite, and they're topped with a crisp, buttery streusel 🫐🤤 The slightly thicker batter prevents the blueberries from sinking and also gives the muffins the most gorgeous tall, bakery-style muffin tops. Perfectly crisp gluten-free crackers with just the right balance between delicate and crunchy – I seriously can't stop eating these 🤤😂 They're super quick and easy to make, and they taste INCREDIBLE.
