Start by making the chia pudding. Mix the ingredients together in a jar or container and stir it all really well. Wait about 3 minutes then stir everything again so there are no clumps. Cover the jar and place it in the fridge for at least one hour or until it thickens. 2. If you’re using a superfood powder you can mix the vanilla yogurt and superfood powder together in a separate bowl until well combined. 3. Assemble the parfaits by pouring a layer of chia pudding at the bottom of a jar or container followed by a layer of yogurt, then fresh fruit or any additional toppings.

Stir in penne and return to a boil. Cook pasta uncovered, stirring occasionally, until tender yet firm to the bite, about 10 minutes; rinse with cold water and drain well. Whisk olive oil, vinegar, garlic, lemon juice, oregano, salt, and pepper together in a bowl; set aside. Combine pasta, tomatoes, green and red peppers, onion, cucumber, olives, and feta cheese in a large bowl. Pour vinaigrette over pasta mixture and mix well. Combine all ingredients in a large jar or container. Stir everything together until well combined. 2. Wait 2-3 minutes then stir everything again, breaking up any clumps of oats or chia seeds that have formed. 3. Cover the mixture and place it in the refrigerator for at least an hour or until the chia seeds and oats have absorbed the oat milk and a thicker consistency has formed.
