MEXICAN STREET CORN PASTA SALAD 🌽 Creamy, tangy, smoky, and packed with flavor — this pasta salad is always a hit. The cottage cheese dressing makes it extra creamy while adding a boost of protein, and the chili lime flavor combo is SO good. Perfect for cookouts, potlucks, summer dinners, or whenever you need an easy side everyone will go back for seconds of. YOU’LL NEED: -1 lb pasta (I used ditalini, b/c so cute) -2 T olive oil, divided -2 (12-oz) bags frozen fire roasted corn (no need to thaw) -1 medium jalapeño, seeded and diced -1 bunch green onions, sliced -1 c chopped fresh cilantro -8 oz crumbled Cotija or feta cheese For the dressing: -1 c cottage cheese -2 T olive oil -Zest and juice of 2 limes -1 tsp hot sauce -1 tsp chili powder -1 tsp smoked paprika -½ tsp kosher salt -2 T milk, plus more as needed COOK the pasta al dente. Reserve ¾ c of the pasta water, then drain and rinse the pasta under cold water. Shake it as dry as you can, then toss with a bit of olive oil to prevent sticking. MAKE the dressing: Blend all dressing ingredients, thinning with milk as needed to make it pourable. SAUTÉ the corn in 1 T olive oil over medium heat until warmed through, about 8 minutes. ASSEMBLE: In a big bowl, combine the pasta, corn, jalapeño, green onion, cilantro, and cheese.
