Mediterranean Stuffed Eggplant with Couscous Ingredients (Serves 4) Eggplant 2 medium eggplants, halved lengthwise 2 tbsp olive oil Salt & black pepper, to taste Couscous Filling 1 cup couscous 1 cup hot vegetable broth or water 1 tbsp olive oil ½ cup cherry tomatoes, chopped ¼ cup red onion, finely diced ¼ cup bell pepper, diced 2 tbsp fresh parsley, chopped 1 tbsp fresh mint, chopped (optional) 1 tsp lemon zest 1–2 tbsp lemon juice Mediterranean Flavor 2 cloves garlic, minced ½ tsp ground cumin ½ tsp paprika ¼ tsp cinnamon (optional but authentic) Toppings (Optional) ¼ cup crumbled feta cheese Kalamata olives, sliced Toasted pine nuts Instructions Preheat oven to 200°C / 400°F. Scoop out some flesh from the eggplants, leaving a thick shell. Chop the flesh. Brush eggplant shells with olive oil, season with salt and pepper, and bake for 20 minutes. Meanwhile, pour hot broth over couscous, cover, and let steam 5 minutes. Fluff with fork. Sauté chopped eggplant flesh with olive oil and garlic until soft. Add tomatoes, onion, bell pepper, spices, lemon zest, and lemon juice. Mix sautéed vegetables with couscous, parsley, and mint. Stuff mixture into baked eggplants. Return to oven and bake 10–15 minutes more. Top with feta, olives, or pine nuts before serving.
