FRUITY GELATINI! 🍦 Ingredients: • A handful of strawberries (or swap with blueberries or raspberries) • 1 ripe banana (the riper, the sweeter!) • 2 tablespoons Greek yogurt • Optional: For babies over 1 year, you can add 1–2 teaspoons of honey Method: 1. Add all the ingredients to a blender and blend until smooth. 2. Pour into ice lolly moulds. 3. Freeze for 3–4 hours, or until completely frozen. 4. PEA BISCUITS 🫛 Ingredients * 100g frozen peas, steamed or boiled * 65ml water * 170g self-raising flour (or you can use plain or white spelt flour + 2 teaspoons of baking powder) * 40g unsalted butter, melted (Optional for toddlers and adults) 40–50g grated cheddar or Parmesan for a stronger flavor — the base version is very light, perfect for babies! Method 1. Blend the peas with the water until you get a smooth and creamy purée. 2. In a large bowl, mix the flour with the pea purée. 3. Add the melted butter and knead by hand until a smooth dough forms. (If the dough is too sticky, add an extra tablespoon of flour.) 4. Place the dough onto a sheet of parchment paper and roll it out thinly. (Remember: the thinner the dough, the crispier the crackers will be.) 5. Use a sharp knife or a pizza cutter to cut the dough into the shapes you like. 6. Transfer the parchment paper directly onto a baking tray. Prick the crackers with a fork and, if you like, sprinkle some extra grated cheese on top. 7. Bake in a preheated oven at 180°C (350°F) for 10–15 minutes, or until the edges are lightly golden. (Baking time will vary slightly depending on the thickness of the crackers.) 8. Let the crackers cool completely before serving. BROCCOLI OMELETTE🥦 Ingredients • 2 eggs • 1-2 raw broccoli florets • 2 tablespoons self-raising flour (or plain/ whole wheat/ spelt flour) • A big handful of grated cheddar cheese or Parmesan (optional) • A little olive oil for cooking Method: 1. Add the eggs, broccoli, flour, and cheese to a blender and pulse until well mixed. 2. Heat the olive oil in a non-stick pan over medium heat. 3. Pour the mixture into the pan and cook until both sides are golden and fully cooked. 4. Allow to cool slightly, roll it up, cut into strips, and serve. 5. RED LENTIL PASTINA!🧡 Creamy, comforting and with extra protein thanks to the red lentils 🧡 My girls always ask for seconds with this one! Ingredients: (serves 2) • 160g small pasta of choice • 80g red split lentils • 1 tablespoon tomato purée • A big handful of Parmesan • 1 litre water + stock or salted boiling water Method: 1. Add the red lentils and small pasta to salted boiling water or stock. 2. Add the tomato purée, mix well and cook on a medium-high heat until everything is soft and well cooked. (About 20-25 minutes) 3. If needed, gradually add more water while cooking. 4. Remove from the heat, add the Parmesan and mix well. 5. PIZZA CRACKERS! 🍕 Ingredients: • 100g tomato passata • 140g flour mixed with 1 teaspoon of baking powder • 40–50g cheddar or parmesan cheese, finely grated • 20g extra virgin olive oil • Optional: 1–2 teaspoons of dried oregano or extra flavour Method: 1. Preheat the oven to 180°C (350°F). 2. In a large bowl, mix all the ingredients together using your hands until a dough forms. 3. Place the dough on a sheet of parchment paper and roll it out thinly (the thinner the dough, the crispier the crackers!). 4. Cut into small squares using a sharp knife or pizza cutter. 5. Prick each cracker with a fork. 6. Bake for 12–15 minutes, or until the edges are lightly golden. Adjust the time depending on how thick your dough is. 7. Let cool slightly before serving. SALMON BROCCOLI TOTS! Save this easy lunch/dinner idea! 🥦🐟One of those meals I make when I want something quick and easy but still with some veggies and salmon in 🥰 Ingredients • 1 salmon fillet (90g) • 200g floury potatoes (1 cup), peeled and cut into pieces • 100g broccoli florets (1 cup) • 30g dried breadcrumbs (1/4 cup) • 30g grated Parmesan (1/4 cup) • 1 teaspoon dried parsley • Extra virgin olive oil • For adults and babies over 1 year old, you can add a pinch of salt to the mixture Method 1. Steam the salmon fillet and potatoes for 15 minutes, then add the broccoli florets and cook for another 5 minutes or until tender. 2. Mash everything together in a bowl. 3. Add the breadcrumbs, grated Parmesan, and dried parsley. Mix well. 4. For adults and babies over 1 year old, add a pinch of salt if desired. 5. Form the mixture into small tots. 6. Transfer the tots to a prepared baking dish and drizzle with a little olive oil. 7. Bake at 180°C (350°F) for 20 minutes or until golden brown. 8. Let them cool slightly before serving, as they will set while cooling. Made these ABC pancakes today and they went down so well 🍎🍌🥕 Such an easy way to add some fruit and veg into breakfast/snack time too! ABC PANCAKES! 🍎🍌🥕 Ingredients: * 1 small ripe banana * 1 small carrot, peeled and grated * 1 apple, peeled and grated * 40g flour of choice - I used white spelt flour * 1 egg * Optional, 1/2 teaspoon baking powder - to make them fluffier * Unsalted butter or coconut oil for cooking Method 1. Mash banana in a bowl. 2. Add all the rest of the ingredients and mix until well combined. 3. Lightly oil a nonstick skillet and heat over medium heat. 4. Drop 1 tablespoons of batter in the pan. 5. As soon as the pancakes are cooked enough that you can get a pancake flipper underneath without breaking, flip and cook the other side until brown. 6. Serve and buon appetito! 😋 👶🏼 Suitable from 6 months ❄️ Store cooled pancakes in an airtight container in the fridge for up to 3 days. For freezing, freeze pancakes individually on a baking sheet, then transfer to a freezer bag. These were some of the first foods I introduced to my baby during our first month of weaning 👶🏼 Right now it’s definitely more about exploring than actually eating much 😂 touching, squishing, tasting… and throwing things on the floor of course! ZUCCHINI TWIST! Ingredients: • 200g (1 1/2 cups) self-raising flour (or 200g plain flour mixed with 2.5 tsp baking powder) • 190g (3/4 cup) Greek yogurt (or dairy-free Greek yogurt) • 1/2 grated zucchini (courgette), squeezed • 3-4 tablespoons cream cheese • Big handful of grated cheddar cheese or Parmesan Method: 1. Preheat the oven to 200°C (400°F). 2. In a medium bowl, mix flour and yogurt together. 3. When almost combined, transfer the dough to a flat surface and knead into a ball (add more flour if the dough is too sticky). 4. Sprinkle with more flour and roll out the dough on a floured surface, forming a rectangle approximately 1 centimeter thick. 5. Spread the cream cheese over one half. Top with the grated zucchini and the grated cheese. 6. Fold it to create a sandwich and press gently with the rolling pin. 7. Cut into strips, about 1.5-2cm thick. (As shown in the video). 8. Twist each strip and place on a baking tray lined with parchment. Brush the top with melted butter if desired. 9. Bake for 15-20 minutes or until risen and golden brown. 10. PEAS & POTATO TOTS! Ingredients * 350g (2 1/2 US cups) potatoes, boiled or steamed * 80g (1/2 US cup) frozen peas, cooked * 30–40g (1/2 US cup) grated Parmesan or cheddar cheese * 1 egg (optional) * 20g (1/4 US cup) breadcrumbs + extra for coating Method 1. Boil or steam the potatoes until soft (check with a fork). Set aside until cooled. 2. Meanwhile, cook the frozen peas in boiling water until soft. 3. Preheat oven to 200°C (390°F) and line a baking tray with baking paper or a silicone mat. 4. Place potatoes in a bowl. Mash with a fork, then mix with the breadcrumbs, cheese, and egg. 5. Add in the peas and mix everything gently. 6. Scoop a heaped tablespoon of the mixture and form it into a tot. 7. Coat both sides with a little breadcrumbs (optional, but makes them crispier). 8. Place your tots on the prepared tray. 9. Bake for 20–25 minutes, until golden and crispy. 10. Mash the banana and blueberries in a bowl. 2. Add the oat flour and egg, then mix until well combined. 3. Lightly grease a non-stick pan and heat over medium heat. 4. Add 1–2 tablespoons of batter per pancake. 5. Once the pancakes are set enough to flip without breaking, turn them over and cook until golden on both sides. 6.
