PEA & CARROT FRITTERS!🫛🥕 Ingredients • 100g peas • 1 small carrot, grated • 1 large egg • 30g grated cheese • Olive oil for frying Method 1. Add all the ingredients to a bowl and mix well. Gently mash the peas with the back of a fork. 2. Heat some olive oil in a skillet over medium-low heat. Scoop 1 tablespoon of batter for each fritter and cook until the underside is golden brown (adjust the heat if they brown too quickly). 3. Flip and cook on the other side. 4. Let them cool slightly before serving. 5. It’s ready in under 30 minutes, family-friendly, and the perfect way to get everyone fed after a busy school day!🙌🏻 📚 You can find more recipes like this in my book, available on Amazon! 🥰 Ingredients • 2 skinless salmon fillets • 1 block feta cheese • 400g cherry tomatoes • 300g pasta of choice • Extra virgin olive oil • Black pepper Method 1. Preheat the oven to 180°C (350°F). 2. In a large ovenproof pan, add the salmon, feta, and cherry tomatoes. Drizzle with olive oil and season with black pepper. 3. Bake for 20 minutes. 4. Meanwhile, cook the pasta in salted water. 5. Remove the pan from the oven and mash everything together with a fork. 6. Sweet Potato & Lentil Pizza!🍠🍕 A simple way to add extra plant-based protein and fibre to pizza night! 🥰 Ingredients • 200 g cooked sweet potato, mashed (weight after cooking) • 50 g dried lentils (weight before cooking) • 120–140 g plain or white spelt flour (you may need slightly more or less depending on the moisture of the sweet potato) • 1 tsp baking powder Toppings • Tomato passata • Mozzarella (avoid for babies under 1 year) • A drizzle of extra virgin olive oil Method 1. Cook the lentils according to the packet instructions and allow them to cool. 2. Mash the cooked sweet potato and blend or mash the lentils until smooth. 3. Mix with the flour and baking powder until you have a soft, smooth dough. 4. Place the dough onto a sheet of baking paper and, using a rolling pin, roll it out to about 1 cm thick. If needed, sprinkle a little flour on top to stop it sticking to the rolling pin. 5. Top with tomato passata mixed with a drizzle of olive oil. Add a pinch of salt only for children over 1 year, then add the mozzarella if using (do not use mozzarella for babies under 1 year). 6. Bake in a preheated oven at 190°C (375°F) for about 20 minutes, or until the base is cooked through and the mozzarella is melted and golden. 📚 You can find more recipes like this in my book, available on Amazon! 🥰 👶🏼 From 6 months: Cut into finger-sized strips and serve with the tomato passata and olive oil only (no mozzarella). From 12 months: You can add mozzarella if your little one is managing textures well. ❄️ Storage: Store leftovers in an airtight container in the fridge for up to 3 days. Freeze for up to 3 months. Defrost overnight in the fridge, or reheat straight from frozen in a 180°C (350°F) oven for 10–15 minutes, until piping hot. SWEET POTATO CRÊPES!🍠 by @yummy_little_belly Makes 3–4 crêpes, depending on pan size 📚 You can find more recipes like this in my book, available on Amazon! 🥰 Ingredients • 100g steamed sweet potato (mashed) • 1 egg • 70g flour (plain, wholemeal, or white spelt) • 140ml milk of choice • Unsalted butter or oil, for cooking Method 1. Add all the ingredients to a bowl or blender and mix until smooth. 2. Heat a non-stick pan over medium heat and lightly grease with butter or oil. 3. Pour a small amount of batter into the pan and swirl to spread it evenly. 4. Cook for 1–2 minutes, until the surface looks set and the bottom is lightly golden. 5. Flip and cook the other side until golden. 6. Repeat with the remaining batter. 7. Serve with your favourite sweet or savoury fillings. STRAWBERRY BANANA MUFFINS! 🍓🍌 Ingredients (makes 6 muffins) • 2 small ripe bananas (the riper they are, the sweeter the muffins!) • 1 handful of chopped strawberries • 1 large egg • 120g white spelt flour (or plain/wholewheat flour) • 1 heaped tsp baking powder • A handful of chocolate chips (optional) Method 1. Preheat the oven to 180°C / 350°F and line a muffin tray with 6 cases. 2. Mash the bananas in a bowl until smooth. 3. Add the strawberries and the egg, then mix well. 4. Stir in the flour and baking powder until just combined. 5. Divide the mixture between the muffin cases. Top with chocolate chips if you like. 6. Bake for 15–20 minutes, or until nicely golden. 7. Let them cool down and buon appetito! 😋 👶🏼 Suitable from 6 months ❄️ Store in an airtight container for up to 2 days, or freeze for up to 2 months. Cut into chunks and add to a blender. 3. Blend until smooth. 4. Pour into lolly moulds. 5. Freeze until solid (4-6 hours). 6. Mash banana and strawberries in a bowl. 2. Add the oat flour and egg and mix until well combined. 3. Lightly oil a nonstick skillet and heat over medium heat. 4. Drop 1-2 tablespoons of batter in the pan. 5. As soon as the pancakes are cooked enough that you can get a pancake flipper underneath without breaking , flip and cook the other side until brown. 6. Serve and buon appetito! 😋 👶🏼 Suitable from 6 months ❄️ Store cooled pancakes in an airtight container in the fridge for up to 3 days. For freezing, freeze pancakes individually on a baking sheet, then transfer to a freezer bag. AVOCADO APPLE PANCAKES! 🥑🍎 Perfect for BLW and a great way to introduce avocado in a different way! Ingredients * 1/2 avocado * 1 apple, peeled and grated * 40g flour of choice (I used white spelt flour) * 1 egg * Optional: 1/2 tsp baking powder, for fluffier pancakes * Coconut oil or unsalted butter, for cooking Method 1. Mash the avocado in a bowl. 2. Add the remaining ingredients and mix until well combined. (If the mixture feels too thick, add a little milk until you reach a spoonable consistency.) 3. Lightly grease a non-stick pan and heat over medium heat. 4. Spoon 1 tablespoon of batter into the pan for each pancake. Keep the pancakes fairly thin so they cook properly in the centre. 5. Cook for a few minutes on each side until golden brown and cooked through. 6. Serve and buon appetito! 😋 👶🏼 Suitable from 6 months ❄️ Store cooled pancakes in an airtight container in the fridge for up to 2 days. To freeze, place the pancakes on a baking tray in a single layer until frozen, then transfer to a freezer-safe bag or container. Mash banana and raspberries in a bowl. 2. Add the oat flour and egg and mix until well combined. 3. Lightly oil a nonstick skillet and heat over medium heat. 4. Drop 1-2 tablespoons of batter in the pan. 5. As soon as the pancakes are cooked enough that you can get a pancake flipper underneath without breaking, flip and cook the other side until brown. 6.
