Potatoes and carbohydrates in general have gotten such a bad rep, and it’s really unfortunate because: 1. Carbohydrates are our body’s favorite form of fuel. They give us energy and keep us going! And they’re super important for brain health. Now, that’s where it’s important to differentiate between refined carbohydrates from ultra-processed food (pastries, chips, candies, etc.) and whole food sources of complex carbohydrates, which are fiber-packed and provide a slow, sustained energy release.
