making a summer-y lunch spread with less than 10 ingredients!! thanks to @primalkitchenfoods creamy sriracha and caesar dressing ;) #ad I marinated the chicken in primal kitchen creamy sriracha for 30 minutes then added to skewers to grill until nicely browned on both sides. you can also serve the creamy sriracha on the side for dipping! for the salad, I love the combo of fresh lettuce greens, avocado, corn, crumbled feta, smashed cucumbers, and chopped cilantro. then tossing in primal kitchen caesar and served either on the side or with salted tortilla chips!! Finding small ways to make ordinary days feel a little more special thanks to @barillaus Creamy Genovese Pesto :) #ad Today’s early summer lunch was a grilled zucchini burrata and sundried tomato pasta salad with @barillaus Creamy Genovese Pesto and rotini pasta, fried zucchini blossoms, raspberry lemonade and grilled chicken! For the creamy pesto vinaigrette: 1/2 cup Barilla Creamy Genovese Pesto 1/3 cup extra virgin olive oil 3 tablespoons red wine vinegar Salt & black pepper, to taste For the pasta salad: 3 zucchini or yellow squash, sliced into ½” strips 1 tablespoon extra virgin olive oil 16 oz. Barilla Rotini Pasta, cooked until al dente and drained 8 oz burrata, shredded 2 large shallots, thinly sliced ½ cup sundried tomatoes, chopped 1/3 cup fresh mint, chopped 1/3 cup fresh basil, chopped Zest of 1 lemon (optional) grilled chicken for added protein! To make the vinaigrette, whisk all ingredients together in a small bowl or pourer until smooth. Season with salt and black pepper to taste. Set aside. Preheat your grill to 450F (up to 500F) or grill pan on stovetop until almost smoky. Drizzle the sliced zucchini with the olive oil. Place directly on the grill racks to cook 1-3 minutes on each side, until nice char marks. Remove from heat to chop into bite-sized pieces. In a large bowl, combine the cooked pasta, shredded burrata, thinly sliced shallots, grilled zucchini, chopped sundried tomatoes, mint, basil, and lemon zest. If adding the chicken, chop into bite-sized pieces prior. Drizzle with the creamy pesto vinaigrette and toss until very well combined. #summerrecipes #pastasalad #easydinnerideas
