Peanut butter cheesecake ice cream 🍨 🤯 Follow @lainiecooks_ for more healthy recipes ideas! I’m actually freaking out that you can make the creamiest ice cream that tastes like straight up cheesecake ice cream but is actually good for you and LOADED with protein. The star ingredient? WHOLE MILK COTTAGE CHEESE. If you think you don’t like cottage cheese, this will still win you over. I need to make other flavors asap… Hit me with some flavors ideas in the comments! Ingredients: 1 container of @good_culture whole milk cottage cheese 1/4 cup or more sweetener of your choice (I like to use raw honey or date syrup) 1-2 tbsp of natural peanut butter 1/2 cup chocolate chips Instructions: Using a high powered blender, food processor, or immersion blender, add cottage cheese and sweetener and blend until it’s silky smooth. Add in peanut butter and chocolate chips. Make swirls using a spoon and place it back into container. Top with more peanut butter and chocolate chips. Freeze for a few hours and enjoy! PRO TIP: to make sure it does not turn icy, stir every hour or so while in freezer and don’t freeze longer than 4-5 hours. #cottagecheese #cottagecheeseicecream #proteinicecream #glutenfree #highprotein #healthyicecream #dessertideas

Hot honey margarita mocktail ✨🫶 my go to drink to sip on while I’m making dinner or to make when I have friends over! Follow @lainiecooks_ for more functional mocktails and healthy recipes 👌 Ingredients 1 tsp Hot honey + more for rim Tajin 1 teaspoon apple cider vinegar juice of two limes Juice of one orange Instructions add some hot honey and tajin to a plate and roll in the honey first, then tajin to rim a glass. Add 1 teaspoon of hot honey along with lime juice, apple cider vinegar,and the juice from the orange. Add ice and stir to mix everything together. Makes 1 drink. #mocktails #margaritamocktail

Homemade SMASH CAKE RECIPE 🎂 perfect for your baby’s first birthday made with real whole food ingredients ✨ Ingredients 4 cups super-fine blanched almond flour 1 tsp cinnamon 1 tsp baking soda 1/4 tsp salt 4 large overripe bananas 6 eggs, beaten 1/2 cup unsweetened applesauce Frosting 3 cups heavy whipping cream 1 tbsp full fat Greek yogurt 2 tbsp maple syrup (optional) Garnish (optional): Dye-free sprinkles Instructions Preheat oven to 350°. Mash bananas until smooth. Mix in eggs and applesauce. In a separate bowl combine almond flour, cinnamon, baking soda and salt. Fold dry ingredients into wet until combined. Pour into lined two 6 inch cake pans and bake about 28-35 minutes until just set. Let cool completely. Once cooled, carefully slice each cake layer in half horizontally to create 4 layers. Spread whipped frosting between each layer, stacking as you go. Once assembled, frost the outside of the cake and finish with dye-free sprinkles. To make the frosting: whip heavy cream until it starts to thicken, add maple syrup, Greek yogurt then continue whipping to soft peaks (takes 4-8 minutes). #smashcake

Protein Strawberry Shortcake Cheesecake 🍓🍰 My protein cheesecake goes viral every time I share it, so I had to make a strawberry shortcake version using fresh, organic @driscollsberry strawberries (my favorite). This is the perfect, better-for-you cake for spring and summer and one you’ll want to keep on repeat. Ingredients: Cheesecake • 2 cups cottage cheese (full fat works best) • 4 oz softened cream cheese • 2 tbsp cornstarch • ½ cup sugar (I use a monkfruit blend) • 2 eggs • 4 fresh strawberries • 1 tsp vanilla extract Strawberry shortcake crumble • 1 bag gluten-free vanilla cookies or graham crackers • ½ cup freeze-dried strawberries • 1 tbsp melted butter or oil Instructions: Preheat oven to 350°F. Add all cheesecake ingredients to a blender and blend until completely smooth. Pour into a parchment-lined 6-inch cake pan and bake for 35–40 minutes. While it bakes, add the cookies and freeze-dried strawberries to a blender or food processor and pulse a few times until crumbly. Transfer to a bowl and mix in the melted butter or oil until it resembles a crumble. Once the cheesecake has fully cooled, add the strawberry shortcake topping and refrigerate for at least 6 hours or overnight for best texture. #driscollsberries #driscollspartner #onlythefinestberries
