Today we’re making dinner on a dime with @goodcook , aka a delicious, easy, and budget-friendly dinner! I used the GoodCook cutting board, knife and removable handle frypan to make this recipe. I love GoodCook products, as they work amazing and are a great value! Recipe * 1 tbsp oil of choice * 1 block tofu, cut into cubes (approx 14oz, firm or extra firm) * 1 small onion, chopped (I used a red onion) * 1/2 jalapeno - finely chopped (optional for spice) * 1 bell pepper - finely sliced * 1 teaspoon grated ginger * 2 garlic cloves, minced * 3 tbsp green curry paste * 14oz can full-fat coconut milk * 1 teaspoon sugar or sweetener of choice * 2 tbsp soy sauce (gluten-free if needed) * Juice from 1 lime * 1/4 cup fresh chopped cilantro (plus more for topping) * 2 heads baby bok choy * Optional toppings: sesame seeds Heat oil in GoodCook skillet over medium heat. Add tofu, onion, jalapeno and bell pepper. Cook for 5 minutes until tofu starts to brown and veggies are soft. Add ginger, garlic and curry paste. Cook for 5 more minutes. Add all remaining ingredients to the pan and bring to a simmer. Simmer for 10 minutes to deepen the flavors. Turn heat to low and fold in the bok choy. One of my top recommendations to improve the taste and nutrition of your recipes is to use grass fed dairy. That is why I am so excited to celebrate National 100% Grass-Fed Organic Dairy Day with my favorite dairy brand @maplehillcreamery Maple Hill supports 100% grass fed small dairy farms. Not only is grass fed dairy delicious it’s also better for the environment, the farms and most importantly, the animals. #ad Recipe: Chicken 1-1.2 lbs chicken breast (from 2 medium breasts) 1.5-2 tablespoons melted Maple Hill butter (salted or unsalted works) 1 teaspoon salt 1/2 teaspoon onion powder 1/2 teaspoon smoked paprika 1/2 teaspoon garlic powder 1/2 teaspoon chili powder Pinch black pepper Dressing 1/2 cup Maple Hill kefir 1/3 cup mayo 1 garlic clove 1/2-1 teaspoon salt (adjust to your preference) Juice from 1/4 lemon 1 tablespoon fresh chopped chill 1 tablespoon fresh chopped parsley 1 teaspoon dried chives (can use 1 tablespoon fresh chives) 1 teaspoon onion powder Pinch black pepper Other ingredients 15 oz can black beans - drained and patted dry ~10 oz clamshell cherry tomatoes - quartered 1 big head of romaine - finely chopped 1 big bell pepper of any color - finely chopped Instructions Preheat oven to 425 degrees. Brush chicken breasts on both sides with butter and then season on both sides. Bake for 15-25 minutes, until a thermometer reads 165 degrees and the breasts are cooked through. Add all dressing ingredients to a food processor and blend until smooth. Once chicken has cooled, cut it into small cubes. Add all salad ingredients including the cooked chicken.
