This vanilla honey cake with honey whipped cream frosting screams summer. I used @frontiercoop Regenerative Organic Certified® Pure Madagascar Vanilla Extract which not only tastes amazing but is made with ingredients that are responsibly sourced and good for the planet. Cake * 1/2 cup softened butter * 3/4 cup honey, any honey works but I prefer raw * 1 tablespoon Frontier Co-op Regenerative Organic Certified® Pure Madagascar Vanilla Extract * 2 large eggs * 2/3 cup greek yogurt * 1 1/2 tablespoons milk, dairy is best but any milk works * 2 cups all purpose flour * 2 teaspoons baking powder * tiny pinch salt Whipped cream * 1 pint whipping cream * 2–3 tablespoons honey * 1 teaspoon Frontier Co-Op Madagascar Vanilla Extract Optional toppings * fresh chopped strawberries or fruit of choice Instructions 1. Preheat oven to 350 degrees. 2. In a separate bowl add flour, baking powder and salt. Whisk together until combined. 3. Add butter and honey to stand mixer (or bowl if using hand mixer). Cream together for about 3 minutes, until combined. I used speed 7 on my stand mixer. 4. Add eggs and vanilla to the mixer and mix together for about 2 minutes, until combined. Add in greek yogurt and milk and mix again for about 2 more minutes, until combined. 5. Add flour mixture to the mixer and mix together until combined, this should take 2–3 minutes. 6. Grease a 9 inch cake pan. I used avocado oil for this. 7. Evenly spread cake batter into the cake pan. Bake for 30–40 minutes, until a toothpick comes out clean. 8. Let cake cool fully, outside of the pan for at least 1–2 hours. You can speed up the cooling process by putting it in the fridge for 15 minutes at the end of the cooling process. 9. Make the whipped cream by adding whipping cream, honey and vanilla to your stand mixer. Mix on medium high until thick and creamy. At the end you can taste and add more honey if desired. I found 2 tablespoons was plenty sweet for me. 10. Top cake with whipped cream. You will likely have a little left over which can be saved and eaten with fruit on another day. Add chopped fruit to the top of the cake, slice and enjoy. #frontiercoop_partner
