This Jennifer Aniston Salad is fresh, filling, and loaded with couscous, chickpeas, cucumber, herbs, pistachios, feta, and the best lemony dressing. I turned it into a meal prep version that stores SO well, which means lunch is ready to go for days! To meal prep, portion the salad into containers and store the dressing separately. When you’re ready to eat, pour the dressing right into the container, add the lid, and shake it all together.
