No Oven Meals, Pt. 5! 15 Minute Italian Chopped Salad! So simple and delish, perfect for meal prep or for a quick lunch! Love a meal that requires no oven, minimal prep, & minimal time 👏 - - - Ingredients: 2 large heads romaine lettuce 1/2 cup chopped red onion 1/2 cup sliced pepperoncini rings 1/2 lb. provolone, chopped 1/2 lb. salami, chopped 1 lb. cherry tomatoes, chopped Italian Dressing: 1/4 cup olive oil 1/4 cup apple cider vinegar 2 tbsp lemon juice 2 tbsp oregano 1 tbsp Dijon mustard 2 tsp garlic powder 1salt 1/4 tsp. freshly ground black pepper Instructions: Combine all of the salad ingredients in a large bowl Toss In a small bowl or blender, mix the Italian dressing ingredients well. Postpartum Freezer Meal Prep from last year! Revisiting this a year later & these sandwiches were my favorite thing I prepped! These are great meal prep options for back to school time next month too! - - - - Ingredients: •12 English Muffins •12 eggs •1/2 cup milk of choice •2 bell peppers, diced •1/2 cup chopped spinach •1 tsp garlic •1/2 tsp salt •1/4 tsp pepper •8-12 sausage patties •12 slices of cheese (I used sharp cheddar cheese) •4 tbsp butter, melted Instructions: 1. Preheat oven to 350F 2. Heat two skillets over medium heat 3. Dice peppers and spinach. 4. In a medium mixing bowl, whisk together eggs, milk, spices. Then stir in diced peppers and spinach 5. Add the egg mixture to one skillet and scramble until cooked through 6. Add the sausage patties to the other skillet and cook for 3-4 minutes per side, until the internal temp is 160F 7. Line two sheet pans with parchment paper 8. Add the English muffins then layer on the eggs, sausage, and one cheese slice 9. Brush the tops of the English muffins with butter 10. Bake for 5-8 minutes, until the cheese is melted and the English muffin tops are toasted 11. Let cool completely then wrap in aluminum foil and store in freezer bags for up to 3 months. 12. To reheat in the microwave, unwrap a sandwich and rewrap it in a paper towel. This is the perfect meal for anyone tired of being in their kitchen this summer. These crockpot chicken fajitas are so easy to make, and were a hit with the whole family. Plus, they require minimal effort for the cook! This is the perfect busy summer day meal! Ingredients: * 2 pounds boneless skinless chicken breasts * 1 tablespoon olive oil * 1 packet of fajita seasoning or taco seasoning * 3 bell peppers- sliced * 1 red onion- sliced * 1/2 cup chicken broth * 3 tablespoons fresh lime juice * 1, 4 oz can green chiles Instructions: 1. add the chicken breasts to the crockpot & sprinkle the seasoning mixture on both sides, making sure to coat each chicken breast well. * add the peppers and onions into the crockpot. * Add the lime juice, broth, & green chilies. Stir everything together the cook on high for 2.5-3 hours or on low for 4-5 hours. * Remove the chicken and shred it into large pieces. Place the chicken back into the slow cooker and toss. Let it rest for about 15 minutes so that it reabsorbs the juices. * Optional- add the shredded chicken to the baking sheet with the peppers and onions and broil for about 5-6 minutes until it gets a little char on the edges. * Serve the fajitas with warm tortillas, guacamole, salsa queso, cheddar cheese, lime wedges, etc!

This salad is LOADED with veggies which I love! Tip: chop the ingredients in your food processor to save time! Follow: @choosing_balance for more easy & healthy recipes. - - - - Ingredients: 2 cups chopped romaine lettuce 2 cups shredded rotisserie chicken 1 chopped bell pepper 1 cup chopped cucumber 1/2 cup shaved carrots 1 cup chopped cabbage 1 avocado, chopped 2 cups cooked rice noodles Sauce: 1/2 cup almond butter 1 tbsp maple syrup 1 tsp lime juice 1 tbsp coconut aminos or soy sauce 1/4 cup water 1 tsp garlic powder 1/2 tsp ginger Salt to taste Instructions: Add of the veggies, chicken, & cooked rice noodles together. Cook the rice noodles according to package instructions & let cool completely before adding. In a food processor or blender, mix the sauce ingredients. This is your sign to make Margarita Popsicles this weekend! They’re so easy to make & sure to be a hit! - - What you need: * 9 popsicle sticks * 9– 3 oz. cups * Sheet pan Ingredients: * 2/3 cup lime juice * 1 cup orange juice * ½ cup tequila * 1/3 cup agave * 1/4 cup cointreau * 3-4 additional limes sliced into rounds * Salt* optional Instructions: In a blender, add the orange juice, lime juice, tequila, cointreau, & honey and simple. Blend well. * Add the cups to a sheet pan. It makes it so much easier to transport to the freezer! * Pour the margarita mix into the cups, leaving about ¼” space at the top of the cup for the limes. * Slice limes into rounds, you want them to be large enough to fill the rest of the cup. * Cut a tiny slice in the center of each lime round and insert a popsicle stick. * Place the popsicle stick and lime into each cup. * Sprinkle with a little salt * Place in the freezer overnight. * Remove and eat immediately! * This makes 9 servings #margarita #margaritas #drinks #happyhour
Elote Hot Dogs 🌭 A fun and easy way to switch up a typical hot dog! Everyone in my family loved these and I’ll definitely be making them again! Ingredients: 8 jumbo hot dogs 8 hot dog buns Elote: 1 package frozen roasted corn (thawed) 1/3 cup white onion, diced 1/2 cup fresh cilantro, chopped 1 tbsp chili powder 1/2 cup cotija cheese Spicy lime aioli: * 1/4 cup mayonnaise * juice of 1 lime * pinch of salt * 1/2 tsp chipotle powder * 1 tsp garlic powder Instructions: •Cook the hot dogs according to package instructions. •Thaw the corn either on the stovetop or in the microwaved. You can also roast your own corn! I just think frozen is 10x easier and just as tasty in this! • add the corn, chopped onion, cilantro, cotija cheese, and chili powder to a medium sized bowl. •Stir to combine •in a small bowl, add the spicy lime aioli ingredients. The easiest summer appetizer- these savory grilled peaches will be your new go to! They’re ready in under 15 minutes and are so tasty. Topped with melty goat cheese & crunchy @cawalnuts. I love using walnuts in recipes like this- an easy way to give a recipe the perfect crunch and nutty flavor & they are a great way to get more fiber in your diet with 2g of fiber per 1 ounce serving. Plus they’re a fresh, grown from the earth ingredient that pairs perfectly with fresh produce. So if you’re looking for your next appetizer for a get together this summer- this is it! Recipe: * 4 large peaches, pits removed & cut in half * 4 ounces goat cheese * 2 tbsp balsamic vinegar * 2 tbsp oil of choice * 1/2 cup chopped California walnuts * Fresh basil to taste Instructions: Preheat Grill to 400F Cut peaches in half and remove pit Brush oil onto peaches Add peaches face down Cook for 3-4 minutes, flip, cook an additional 3-4 minutes While the peaches cook, first, chop walnuts into bite-sized pieces, slice goat cheese into bite- sized pieces, & dice basil. Remove the peaches from heat then top with goat cheese, basil, balsamic, & walnuts Eat immediately and enjoy!
