(Hosted) This 4-hands collab by @chef.dee.chan of 黑珍珠 @theblackpearlsg and Korean Chef Choi Hyun Seok (@crazypenne) of Netflix’s “Culinary Class Wars” and “Chef & My Fridge” fame, had already sold out all the tables over the two-day event, but @huatkaliao and I were fortunate enough to be invited by @brandcellar to the media lunch. The menu was a harmonious cross-cultural showcase with a total of eight courses that featured Chef Dee Chan’s refined Cantonese gastronomy (it has put #TheBlackPearlSg on the map for many foodies in Singapore) and Chef Choi Hyun Seok’s style of contemporary and innovative Korean cuisine (price: $268++ per pax). Both – distinct and unique in their own right. The meal started strong with the two Chefs’ amuse bouche creations proving really exciting and flavourful. They included a superb Seafood Albap which I’d have happily gobbled up extra helpings of, and a startlingly crunchy ball of Tri-Colour “Namul” from Chef Choi, as well as a pretty Yuzu Jelly & King Crab Meat Tart and a plump and flaky bolster of Iberico Char Siew Puff Pastry. Presented next – Hanwoo Beef Tartare. It was visually more stunning any other #beeftartare I’d had encountered previously because the mix of chopped raw beef with avocado, minari and gochujang ice-cream, was encased within a crisp isomalt sphere and finished with a flurry of snow. We were told to crack it open and mix the broken shards with the seasoned beef before relishing the dressed meat with lettuce and perilla leaves. ⬇️ Caption continues below in 2 parts ⬇️

From Screen to Presence — A New Chapter of Asian Culinary Influence Beyond Korea, we chose Taiwan as the starting point of this encounter. As Netflix shows “Culinary Class Wars” and “Chef & My Fridge” captivate audiences across Asia, this is not merely an extension of television— but a cultural dialogue brought into real life. Chef Choi Hyun-seok, Park Eun-young, Oh Se-deuk, and Fabrizio Ferrari met audiences in Taipei for the first time. Within one week, hundreds applied— only 100 were selected to preserve the depth of this encounter.
