This is what I cook when I want to impress my guests…. Really couldn’t be easier and it’s completely delicious. Save this recipe ❤️ For the cauliflower: 1 medium-sized cauliflower remove thick ugly outer leaves but leave any smaller more delicate ones 2 tbsp olive oil 1 tsp Maldon sea salt For the chimichurri: 1 shallot finely diced 1 red chilli pepper diced 3-4 garlic cloves diced ½ cup red wine vinegar 1 tsp salt 1 tsp red pepper flakes ½ cup fresh coriander finely chopped 2 cups parsley finely chopped 3/4 cup extra-virgin olive oil + more as extra For the garlicky yoghurt: 4 heaped tbsp Greek yoghurt 1 garlic clove crushed 1/4 lemon juiced To drizzle: 2 tbsp tahini Pre-heat the oven to 200C. Fill a large pot of water and season well with salt and bring to a boil. Place the cauliflower in, cover and let cook for 6-8 minutes, depending on the size. Check to see if ready by poking the stem with a knife, and then remove the cauliflower and place it on a sheet tray to steam dry for around 10 minutes. Cover with extra virgin olive oil and season well with sea salt. Return to the oven and let roast for 45 minutes until charred and golden all over. Mix together the Greek yoghurt, garlic and lemon juice to make the base. Mix together the shallot, chilli, garlic, red wine vinegar, salt, red pepper flakes and herbs. Stream in the olive oil, it should be runnier than pesto. Remove from the oven. Spoon some garlicky yoghurt onto a serving plate and pop the cauliflower on top. Drizzle with tahini and chimichurri. If you made my meringues from a few posts back, this is the best thing you can do with the yolks! Save this recipe - it’s a goodie! ❤️ (If you do save it, make sure to like it too 🙈) I love making one big one to place in the middle of the table and then scoop into bowls but of course you can make little ones too. Ingredients 600ml double cream 2 tsp vanilla extract 8 large egg yolks 75g caster sugar, plus extra for caramelising Method Heat the cream and vanilla in a saucepan until just below boiling point. Don’t let it boil. Whisk together the egg yolks and caster sugar in a bowl. Gradually pour in the hot cream, whisking constantly. Return the mixture to the saucepan and cook over a low-medium heat, stirring continuously, until thick enough to coat the back of a spoon. Pour into one large serving dish or divide between individual ramekins. I like to pour it through a sieve just to ensure there are no lumps or bits of eggs. Leave to cool, then refrigerate until completely cold. The crème brûlée can be made up to a day ahead and kept covered in the fridge. Just before serving, sprinkle the surface evenly with caster sugar and caramelise with a blowtorch until deep golden and crisp. Leave for a minute or two for the sugar to harden, then serve. #cremebrulee #easybaking #dessert

Ad. I absolutely love having friends round for an easy summer supper, and this menu of Herby Green Chicken Thighs with Smoky Courgette & Asparagus Giant Couscous Salad (and garlic bread!) is just my favourite thing to make. Make sure you save this recipe ❤️ It’s made so simple with @ocadouk because everything comes straight to your doorstep (as early as 5.30am, so my delivery usually comes pre-school run) and you can prep ahead of time and then just BBQ whilst the sun shines! Or the rain pours, in my case! Full recipe below 👇 Serves 4 For the chicken: 8 boneless skinless chicken thighs 1 large bunch coriander 1 small bunch mint 2 garlic cloves ½ green chilli ½ lemon, juiced 2 heaped tbsp Greek yoghurt 2 tbsp olive oil Salt For the salad: 300g giant couscous 2 large courgettes, sliced into planks 1 bunch asparagus, ends trimmed 1 bunch spring onions Handful of fresh mint, chopped Handful of fresh coriander, chopped 150g feta, crumbled Olive oil Dressing: 3 tbsp lemon juice + a squeeze more 1½ tbsp sesame oil 1 tbsp fish sauce 2 tbsp extra virgin olive oil 1 tsp honey 1 small garlic clove, grated For the garlic toast: 75g butter, salted or unsalted 4 garlic cloves, chopped or crushed 1 handful of chopped fresh parsley 3-4 slices of thick sourdough bread Blitz the coriander, mint, garlic, chilli, lemon, yoghurt, olive oil and salt together until smooth. Pour ¾ over the chicken and marinate for at least 1 hour (overnight is even better). Save the remaining marinade for serving. Mix the dressing together and save half for serving later. Cook the giant couscous according to packet instructions. While warm, toss with half the dressing. Recipe continued in the comments ❤️ #stressfreeentertaining #summerbbq
