*UPDATE* Comfy is officially out now 😊 We’ve reached an exciting milestone in our Comfy journey - and that’s an official front cover!!! 😁 I’ve been so excited to share this for a little while. And with the Summer holidays coming to an end and prime comfort food season just around the corner, I thought what better time than now! This book is essentially my love letter to comfort food - it’s packed with hearty, flavour-loaded dinners that are perfect for just about any occasion. Above all though, these are recipes I know you’ll make time and time again. I was really conscious when writing this book that I didn’t cram it with recipes that look good, but fall flat when you try them. Or that you’re realistically just never going to make. My vision was to create that ‘go-to’ cookbook with recipes you can trust and that never get old. It’s deceivingly delicious, because it only uses a handful of basic ingredients, but the way the come together to create this classic is an absolute dream. I guess it’s somewhat similar to an open-faced Cordon Bleu, but its flavour profile is more similar to a Croque. Either way, it’s stupidly delicious. Yes, you could definitely have this as a main, but just like mac and cheese, it makes an awesome side dish too. One thing I will say, is I was not prepared for the intensity of sandwiches over there! And lord knows I love a sandwich, so I was in my element. This focaccia sandwich is inspired by my trip, influenced by my own taste and built with what’s available in the local supermarkets. The result? Incredible. And yes, I did polish off the entire thing by myself, albeit in two sittings 😂 Anywho, I’ve just uploaded the recipe to the blog, so definitely check it out! Hope you love it. The recipe as written offers a big batch of sauce, but you can use for 4 steaks or store leftovers (perfect with literally everything - chicken, seafood, sandwiches, salads etc etc etc).
