Made with nourishing ingredients like bananas, rolled oats, peanut butter and blueberries! I love to enjoy one paired with a scoop of Greek yogurt🫐🥣 Here’s what you need: 2 medium ripe bananas 1 egg 1/3 cup peanut butter 1 1/3 cup oats 1 cup frozen blueberries 1/2 tsp baking powder 2 tbsp maple syrup (optional) Powdered sugar for topping (optional) Preheat to 350F and grease a 9x5 loaf pan. Add all ingredients except the blueberries to the loaf pan and mix to combine, ensuring the bananas are mashed well. Add maple syrup if desired for added sweetness. Mix in the blueberries. Transfer to the oven and bake for 28-32 minutes until the center is set. Here’s what you need: 4 burrito size wraps 4-5 cups shredded chicken OR 1 1/2 lb chicken breast, cooked and shredded 6 strips bacon, cooked and chopped 4-5 cups shredded romaine or iceberg 1/2 red onion, finely diced 1 avocado, sliced 2 cups cherry tomatoes, quartered Greek Yogurt Ranch 2 tbsp mayonnaise 3/4 cup plain Greek yogurt 1/2 tsp garlic powder 1/2 tsp onion powder 1 tbsp fresh dill 2 tsp lemon juice 2-3 tbsp milk 1/2 tsp salt 1/4 tsp black pepper In a small bowl, whisk all ingredients for the ranch dressing except the milk until combined. Add up to 3 tbsp of milk as needed to think. It should be pourable but still thick. Make the BLT chicken salad. Add the lettuce, tomato, onion, chicken and bacon to a large bowl. Pour over 2/3 of the ranch and toss to combine. Taste and add salt and pepper as needed. (I typically add 1/4 to 1/2 tsp of salt depending on if the shredded chicken is seasoned or not) Warm the tortilla so it’s more pliable. Add a heaping 2 cups of chicken salad to the tortilla, followed by sliced avocado and a drizzle of additional dressing.
