Greek Herby Lemon Chicken Sheet Pan✨ One pan dinner idea the whole family will love! Herby lemon marinade, crispy & juicy chicken thighs and roasted potatoes, topped with a lemon yogurt sauce and feta cheese. It’s simple, easy and packed with flavor! Grab the FULL RECIPE at the link in my bio✨ SAVE and SHARE this reel with a friend and FOLLOW me @foodiefromvt for more easy, healthy recipes✨ Here’s what you need: 1 1/2 lb boneless skin on chicken thighs 1 lb Yukon gold potatoes, cut into wedges 1 head broccoli, cut into florets Optional: feta for topping Marinade 1/4 cup olive oil 2 tbsp lemon juice 3 tbsp greek yogurt 1 tbsp dijon mustard 4 garlic cloves, grated or finely minced 2 tsp oregano 1/2 tsp dried thyme 1/2 tsp dried sage 1 1/2 tsp salt 1/2 tsp pepper Yogurt Sauce 1 cup greek yogurt 2 tbsp reserved marinade 1 tbsp fresh chopped parsley Salt and pepper to taste Preheat the oven to 400°F and line a large baking sheet with parchment paper. Arrange the chicken thighs and potato wedges on the pan. Using a small knife, pierce the chicken thighs a few times. Whisk together the marinade ingredients. Reserve 2 tbsp for the yogurt sauce. Pour the remaining marinade over the chicken and potatoes and toss to coat. Lift up the skin of the chicken and massage marinade underneath. Spread the potatoes back in a single layer so they are directly touching the pan to help browning. Bake for 35 to 45 minutes, until the potatoes are tender and golden and the chicken is cooked through. With 15 minutes remaining, flip the potatoes and toss the broccoli in a bit of olive oil and place on top. Broil for the last 2 to 3 minutes to deepen the color on the chicken. Here’s what you need: Pastries 1 sheet puff pastry (9x14”) 1 egg yolk plus 1 tbsp milk, lightly beaten Sesame seeds to top Filling 12 oz package frozen spinach, thawed and well drained 4 oz feta cheese, crumbled 1 cup grated mozzarella 1/2 tsp dried oregano 1 egg white 1 tbsp Better Than Bouillon Sautéed Onion Base OR Roasted Garlic Base Fresh black pepper Preheat oven to 400F and line a large baking sheet with parchment paper. In a large bowl, add the spinach, feta, mozzarella, oregano, egg white (reserve the egg yolk for the egg wash), Better Than Bouillon base and a generous pinch of fresh black pepper. Roll out the puff pastry on a floured surface. Spread the filling evenly across the pastry leaving 1/4” on the long empty. Tightly roll up starting with the long side until fully rolled. Twist the ends to close then turn the roll over and pinch the crease to secure. Turn the roll back over and into 10 even pieces. Place on the baking sheet. Whisk the egg yolk and milk to make an egg wash, brush the tops with the egg wash and sprinkle sesame seeds on top. Almond Flour Oatmeal Cookies w Cadbury Eggs✨ My FAV oatmeal cookies, gooey and soft in the center, crispy and crunchy on the outside! Here’s what you need: 1 cup oats 1/2 cup coconut sugar 1/4 cup organic cane sugar 8 tbsp salted butter, melted and cooled 1 large egg 1/2 tsp vanilla extract 1 cup almond flour 1/4 cup tapioca flour or cornstarch 1/2 tsp cinnamon 3/8 tsp salt (use 3/4 tsp if using unsalted butter) 1/2 tsp baking soda 3/4 cup crushed Cadbury eggs, plus more for topping 1/3 cup dark chocolate chunks In a large mixing bowl, whisk the sugars and butter until combined. Whisk in the egg and vanilla until smooth. Fold in the almond flour, tapioca flour, cinnamon, baking soda and salt until just combined. Stir an additional 1-2 FULL minutes to allow the tapioca flour to absorb moisture which helps for chewy cookies. Fold in the oats, Cadbury eggs and dark chocolate. Transfer to the fridge and chill the dough for 20 minutes while the oven preheats. Do not skip. Preheat the oven to 375F and line a large baking sheet with parchment paper. Scoop 2 tbsp of dough per ball onto the baking sheet, leaving room to spread. Top with additional crushed Cadbury eggs and chocolate chips if desired. You should get around 12 large cookies. Use 2 baking sheets if needed. Bake for 8-12 minutes until the edges are set and golden but the centers still look soft and slightly underbaked. Do not overbake for chewy cookies!! I keep it simple by using @delmonte Mexican Style Street Corn. It’s so convenient having vegetables like this stocked up in my pantry and Del Monte packs their vegetables at peak freshness so I always know I’m getting the highest quality! Here’s what you need: Salad 1 cup dry quinoa 1 (15 oz) can Del Monte Mexican Style Street Corn, drained 1 (15 oz) can black beans, drained & rinsed 1 red bell pepper, diced 1/4 red onion, finely diced 1/4 cup chopped fresh cilantro 2 avocados, diced or sliced 3 oz cojita or feta cheese (heaping 1/2 cup) Lime wedges for serving Smoky Elote Dressing 1/2 cup greek yogurt 2 tbsp mayo 2 tbsp olive oil 1 lime, juice 1 tbsp honey 1 garlic clove, grated 2 chipotle peppers in adobo, finely chopped 1/2 tsp salt Cook quinoa. Add 1 cup quinoa and 2 cups water to a saucepan, bring to a boil then reduce to a simmer and cover for 15 minutes until tender. Remove from heat and let cool while preparing the remaining ingredients. Make the dressing. In a small bowl or measuring cup, whisk all ingredients until smooth. In a large serving bowl, add the quinoa, black beans, bell pepper, red onion, street corn, cilantro, cotija cheese and avocado. Pour desired amount of dressing over and toss well. If serving later, reserve the avocado and some dressing to top just before serving. Taste and season with salt and pepper as needed. Maple Chicken Sausage Patties 1 lb ground chicken 1-2 tbsp maple syrup 1 tsp garlic powder 1/2 tsp dried thyme 1/2 tsp onion powder 1/4 tsp fennel seeds, ground or chopped finely 1 tsp salt 1/2 tsp black pepper 1/4 cup flax seed powder (optional) Eggs 8 eggs 2/3 cup cottage cheese 1/2 tsp salt 1/4 tsp pepper Sandwiches 6-8 slices cheese of choice 6-8 english muffins (use Ezekiel sprouted grain for higher fiber) DIRECTIONS Mix ground chicken with maple syrup + spices, form into 6-8 patties, make an indent in the center to avoid shrinking, chill for 30 minutes, then pan cook for 3-4 minutes on each side until golden. Blend eggs with cottage cheese, S+P, transfer to a parchment lined baking dish and bake at 375F for ~20-25 min until cooked through, then cut into squares. Lightly toast English muffins, then layer with cheese, egg, and sausage. Wrap and store in the freezer for easy breakfasts! Reheat: let thaw in the fridge overnight then bake on 350F for 15 minutes, or microwave for 2-3 minutes. Here’s what you need: Lamb Kebabs 1 lb ground lamb 1 lb ground beef 4 garlic cloves, minced or grated 1/4 cup red onion 1 tbsp cumin 1 tbsp paprika 2 tsp onion powder 1 tsp dried oregano 1 1/2 tsp salt 1 tsp black pepper 1 tbsp olive oil (to use on the pan) Salad 1/2 red onion, sliced thin 1 cup cherry tomatoes, quartered 4 persian cucumbers, diced 1 tbsp fresh parsley 1/2 tsp dried oregano 1 tbsp lemon juice 1 tbsp red wine vinegar 2 tbsp olive oil Salt and pepper to taste Yogurt Tzatziki 1 cup plain greek yogurt 2 tbsp Persian cucumber 1 tbsp lemon juice 1 tbsp olive oil 1 small garlic clove, grated 1 tbsp fresh dill ½ tsp salt Pitas or lavish wraps for serving Preheat oven to 400F and brush a medium sized baking sheet with 1 tbsp of olive oil. In a large bowl, mix all the ingredients for the lamb kebabs. Transfer to the baking sheet, and flatten in an even layer. Using a spatula or bench scraper, cut the mixture into about 12 strips, cutting only halfway through. Cook for 18-20 minutes until cooked through. About halfway through, drain some of the liquid. Let cool for a few minutes then cut the strips. Grab the FULL recipe at the link in my bio ✨ Here’s what you need: Meat Filling: 1 lb ground beef (lamb or mutton for more traditional) 1 small yellow onion, chopped 2 garlic cloves, minced 2 celery stalks, chopped finely 2 large carrots, chopped finely 1 cup frozen peas 1 tsp rosemary, chopped finely 1 tsp thyme, chopped finely 1 tbsp Worcestershire sauce 2 tbsp all purpose flour 2 tbsp tomato paste 1 cup beef or chicken broth 1/2 teaspoon salt 1/2 teaspoon ground black pepper Mashed Potatoes: 3 medium russet potatoes, peeled and quartered 8 tbsp butter 1/4 cup heavy cream 1/2 tsp garlic powder 1/4 tsp salt 1/4 tsp ground black pepper 1/2 cup parmesan cheese 1 egg yolk Heat a large skillet with olive oil over medium. Add onion, celery and carrot and sauté 3-4 minutes until tender. Add the garlic, sauté another 30 seconds. Add beef breaking up with a spoon until browned. Stir in the flour, tomato paste, rosemary, thyme, salt and pepper. Stir in the broth, Worcestershire and peas. Bring to a boil then reduce to a simmer for 5 minutes, stirring occasionally. Turn off the heat and set aside. Place the potatoes in a large pot, cover with cold water. Bring to a boil then reduce to a simmer until fork tender, 12-15 minutes. Drain then return the potatoes to the hot pot, letting cook for 1-2 minutes. Stir in the melted butter and cream along with the garlic powder, salt and pepper. Mash or use a hand mixer until smooth. Stir in the Parmesan, then fold in the egg yolk. Preheat oven to 400F. Pour the meat mixture into mini cocottes. Spoon the potatoes over spreading in an even layer. Top with Parmesan cheese.
