Zesty Corn & Avocado Salad✨A fresh and vibrant main or side dish to add to any Spring and Summer meal! Charred corn, creamy avocado, feta cheese, cilantro and a zesty Honey Lime Vinaigrette to tie everything together! I like to pair with grilled chicken or steak to make it into a full meal! Grab the FULL RECIPE at the link in my bio!🌽 SAVE and SHARE this reel with a friend and follow me @foodiefromvt for more!✨ Here’s what you need: Salad 2 large avocados, diced 4 cups frozen corn 1/2 red onion, sliced thin 1 green bell pepper, diced 1 jalapeño, minced and seeds removed 1/4 cup pepitas 1/3 cup chopped fresh cilantro 1/2 cup crumbled feta or cotija cheese plus more to top Honey Lime Vinaigrette 1/3 cup olive oil 1 tsp dijon mustard 2 tbsp honey 2 limes, juice 1 tbsp red wine vinegar 1 garlic clove, grated 1/2 tsp salt 1/4 tsp black pepper Heat a skillet with a drizzle of olive oil over medium high heat. Add the corn and let cook for a 3-4 minutes to develop a char, toss and cook another 1-2 minutes until warmed through. Remove and set aside to cool while preparing remaining ingredients. Make the dressing. Add all ingredients to a jar and shake well to combine. Assemble the salad. Add the cooled corn, avocado, jalapeño, bell pepper, onion, cilantro and feta. Top with the dressing and toss to combine. Season with salt and pepper or to taste. Serve immediately or transfer to the fridge to marinate to serve later. If enjoying later, reserve the avocado and add just before serving to avoid browning. Chunky Monkey Blended Chia Pudding✨🍌🍫 My chunky monkey blended chia pudding is a mousse-like pudding that tastes indulgent but is a nourishing, filling breakfast with over 24g of protein and 11g of fiber! Banana, chocolate, peanut butter, chia seeds and greek yogurt for that chunky monkey flavor but with good-for-you ingredients! Here’s what you need: 1/4 cup chia seeds 1 ripe banana 1/2 cup milk 3/4 cup greek yogurt 2-4 tbsp peanut butter 1 scoop chocolate protein powder 2 tbsp cocoa powder 1-3 tbsp maple syrup (optional for added sweetness) Pinch of sea salt Blend all ingredients until smooth. Transfer to an airtight container and let chill for at least 30 minutes to overnight for firmest results. Spinach Feta Egg Bites✨These little egg bites are incredibly easy to make and are perfect for a simple healthy and high protein breakfast prep for the week! Keep them in the fridge or even the freezer to enjoy later on! Only a handful of ingredients and always delicious! Comment ‘PAN’ and I’ll send you the link to my silicone muffin pan! Here’s what you need: 7 large eggs 1/2 cup cottage cheese 1 1/2 cups spinach, chopped 1/2 cup crumbled feta 1/4 tsp salt A couple cracks of fresh black pepper Preheat the oven to 375F and spray a 12 cup silicone muffin pan with oil or line with liners. Whisk all ingredients to make the batter. Divide batter between 12 muffin cups. Bake for 20-25 minutes until the center is set. Let cool for a few minutes before enjoying. Store in the fridge for up to 3 days or in the freezer for 3 months. Marinated White Bean Steak Salad✨A dreamy salad, perfect for the Spring and Summer months! Marinated white beans, roasted red peppers, red onion, blue cheese, avocado seared steak and a Chimichurri-inspired dressing! The beans, peppers and onion are marinated in the dressing to soak in the flavors before serving! It holds well in the fridge to enjoy all week! Here’s what you need: Steak 16 oz steak of choice 1 can chickpeas, drained and rinsed 1 can cannellini beans, drained and rinsed 1/2 red onion, sliced 16 oz sliced roasted red peppers (jarred or homemade) 1-2 avocados, ripe but still firm 5 oz blue cheese, crumbled Marinade 1/3 cup olive oil 1/2 lemon, juice 2 tbsp red wine vinegar 2 garlic cloves, finely minced 1/4 tsp dried oregano 1/4 cup chopped parsley 1/4 cup chopped cilantro 1/2 tsp salt Pinch of red pepper flakes Fresh black pepper to taste Make the marinade by whisking all ingredients until combined. In a medium sized bowl, add the beans, onion and red pepper. Pour half the marinade over and toss to combine. Transfer to the fridge to marinate for at least 30 minutes. Let the steak come to room temperature then season with salt and pepper. Heat a large cast iron skillet over medium high heat. Add the steak and cook for 3-4 minutes on each side until seared and cooked to desired doneness. Let rest for at least 10 minutes then slice into strips or bite sized pieces. Assemble the salad. In a large serving bowl, add the marinated bean mixture, steak, avocado and blue cheese. Add the remaining dressing and toss to combine. Serve immediately or store in the fridge for up to 3 days.
