GAH I love this recipe. Lots of you guys have made this one - 4.9 stars from 76 reviews. It reminds me of a curry (cozy, creamy, fragrant) but the flavor is more fresh and light, with coconut, lime, and lemongrass being the stars. And it’s super versatile for meal prep, rice bowls, enchiladas, etc. requires a few extra ingredients for the aji verde, but worth it!
