I've had this account for a loooooong time, and I realized I've never done an introduction post. I'm a pretty private person online, partly because not everyone in my personal life enjoys being on social media, but also because I'm really sensitive and the internet can be a harsh place. I do want to share more, though. I am so grateful to you all for opening up your kitchens, sharing photos of your families enjoying my recipes, and allowing me to be part of your journeys in plant-based cooking. The gratitude I feel from every tagged PBOAB recipe photo or thoughtful and kind message is immense. <3 Here's a little about me to go along with the photos: 1. I'm Toni. I grew up and currently live in Sacramento, CA. I love the heat, being near my family, and having a long season to grow food. 2. I co-host The Plant-Powered People Podcast with my dear friend and business partner, @vegan. She's been a great friend to me over the years, and we've seen each other through the darkness. It's nice to work together so often! 3. I'm thankful I have a partner with whom I can experience life's highs and lows. We share the same fundamental values and lifestyle choices of not consuming animal products, living a life free of drugs or alcohol, trying to be as kind to the earth as possible, not wanting children, etc. I believe that life can be a bumpy road, and I'm glad I have someone steady with me at home. 4. In March 2020, our local shelter @frontstreetanimals had 24 hours to clear their kennels due to the Covid-19 shutdown. I rushed to help and they placed a no-name pitbull into our home. His kind demeanor, friendliness with children and all animals, and affection toward us made it impossible to let him go. We quickly decided to adopt him and have been a happy family since. When summer is here and basil is abundant in my garden, I love making big batches of pesto to freeze and use throughout the year. To avoid spending a fortune on pine nuts, I use sunflower seeds, pumpkin seeds, walnuts, or a combination of them all. Blend them up with lots of garlic, oil, and some spices, and then freeze it in ice cube trays to last all year long. I simply store it in the freezer in an airtight container, and when I’m ready to use it, I warm it up by microwave or stovetop. Ingredients: ▢1 cup of basil ▢½ cup of raw sunflower seeds ▢¼ cup of olive oil ▢3-4 cloves garlic ▢¼ teaspoon of salt ▢¼ teaspoon of sugar ▢¼ teaspoon of black pepper ▢1 Tablespoon of nutritional yeast ▢1 Tablespoon of fresh lemon juice Instructions Combine all ingredients in a food processor and process until creamy. Usually, 1-2 minutes, stopping to scrape down the sides as needed. Toss with warm pasta, spread on toast or pizza, or use as a dip. Today I’m going to show you how to make a really refreshing smoothie for summer using a naval orange, frozen pineapples and bananas, vanilla, annnnd @tachepistachiomilk (get it? pisTASHio)! I like @tachepistachiomilk because it’s thick and creamy, uses a fraction of the water that almond milk uses, and has no added oils. Most importantly, it’s so versatile that it fits into everyday routines like coffee, baking, and smoothies! It has a distinct pistachio taste that I really love but it’s still subtle enough to not overpower everything else. This smoothie makes for the perfect summer pick-me-up! Save this recipe for the next time you need an easy dinner! 🌮 These sheet pan tofu fajitas are one of my favorite weeknight meals because everything cooks on one pan, they’re made with simple, budget-friendly ingredients, and they’re easy to customize with whatever veggies I have on hand. I love serving mine with rice, beans, and all my favorite taco toppings for an easy dinner that always hits the spot. Ingredients: • ½ package extra or super firm tofu • 2 bell peppers, sliced • 1 red or yellow onion, sliced • 3 garlic cloves, minced • 2 tbsp taco seasoning • 2 tbsp vegetable oil My tips: ✨ Slice the peppers and onions into similar-sized strips so everything cooks evenly. 🌮 Warm your tortillas in a dry skillet before serving, they’re softer, easier to fill, and so much better. 🥑 I love serving these with rice, beans, avocado, salsa, cilantro, and a squeeze of fresh lime.
