Our boys are training a lot this summer and kept asking us to make this plate for them after workouts. Wow- killer combo! Sweet Potato: Pierce the skin with a fork 6-8times wrapped in foil and bake in a 450° oven for about 45 minutes until tender Steak: Nothing other than salt and pepper, grill on high heat for about 3 to 4 minutes on each side, depending on how you like your steak grilled. Then let it rest for 10 minutes. Pickled onions: Thinly slice red onions. Boil even parts water & white vinegar and dissolve 2 tablespoons of sugar into it . Pour over red onions, throw in a few slices of raw beets for Color. Nancy & Wayne Smash Burgers The Fancy Sauce * Caramelize 2 chopped yellow onions in 4–6 tablespoons butter with a pinch of salt until jammy and browned (about 20–30 minutes). * Mix with: * 1 cup mayonnaise * 3 tablespoons ketchup * 1 tablespoon yellow mustard * 1 cup shredded kosher dill pickles * 2 teaspoons pickle juice * A pinch of paprika * Salt and pepper to taste * Roll 80/20 ground beef into ¼-pound balls and season with kosher salt. * Place each ball on parchment paper. * On a screaming hot griddle, flip the burger onto the griddle, leaving the parchment on top. Smash very thin with a burger press, then peel off the paper. * Sprinkle with a little more salt. * Cook until a deep crust forms, then flip and top with cheddar cheese. * Toast brioche buns on the griddle while the cheese melts. 5 lbs Beef & Pancetta Bolognese + Cheesy Garlic Bread Philly is heading to @mcgillmlacrosse in a month so showing him how to meal prep in the shared kitchen he will have to use! Should we do more of this? Bolognese * 5 lbs ground beef * 1 lb diced pancetta * 2 tbsp olive oil * 2 onions, diced * 4 carrots, diced * 4 celery stalks, diced * 15 garlic cloves, minced * 2 tbsp basil * 2 tbsp oregano * 1 tbsp tarragon * 1¼ cups tomato paste * 1–2 (28 oz) cans crushed tomatoes * 6 cups chicken stock (adjust for desired thickness) * 2 Parmesan rinds (optional) * Salt & pepper @philliesweatshirt @shanebenaroya Directions: Brown pancetta; remove. Sauté onion, carrot & celery until softened. Add garlic & herbs; cook 1 min. Stir in tomato paste; cook 3–5 min. Add beef and brown. Add stock, 1–2 cans crushed tomatoes (depending on desired thickness), & Parmesan rinds. Simmer uncovered 15 min, adding stock or water if needed. Remove Parmesan rinds. Stir in crispy pancetta. Season and serve with Parmesan. Cheesy Garlic Bread * 1 sourdough loaf * 1 stick softened salted butter * 20 garlic cloves * Olive oil * 2 tbsp parsley * 1 tsp red pepper flakes * 1 cup Parmesan * 2 cups mozzarella Directions: Place whole garlic cloves in a small ovenproof dish and cover with olive oil. Roast at 350°F for 45 min. Remove garlic from the oil and mash with butter, parsley & pepper flakes. Spread on bread. Bake at 400°F for 10 min. Top with cheeses and broil 2–4 min until golden. I learned from @theblondeshallot that the key to good chicken salad is massaging the chicken apart as you shred it with your hands, which is what I did here! Roasted Chicken Waldorf Salad with Dates, Grapes & Apples Ingredients * Meat from 1 whole roasted chicken, hand-shredded * ½–¾ cup mayonnaise, or enough to lightly coat the chicken * 1 apple, finely chopped * 4 ribs celery, finely chopped * 10 Medjool dates, pitted and finely chopped * About 1 cup crunchy red grapes, halved * About 1 cup chopped walnuts, or to taste * 2 tablespoons fresh parsley, minced * Kosher salt and freshly ground black pepper, to taste if you want Dressing * ¼ cup mayonnaise * Juice of 1 lemon * 1 tablespoon honey Instructions 1. Place the shredded roasted chicken in a large mixing bowl. Add ½ to ¾ cup mayonnaise and toss until every piece is lightly coated. The chicken should be creamy but not heavily dressed. 2. Finely chop the apple, celery and dates, halve the grapes, chop the walnuts, and mince the parsley. 3. Add the apple, celery, grapes, dates, walnuts, and parsley to the bowl with the chicken. 4. It’s the most viral mac & cheese on the Internet for a reason…. Made this for Mia after swim practice today & it hit the spot. Viral One-Pot Mac & Cheese Ingredients * 3 tablespoons salted butter * 3 cloves garlic, minced * 1 (16 oz) box medium shell pasta * About 4 cups chicken broth (just enough to barely cover the pasta) * 1 (12 oz) can evaporated milk * 2 cups sharp cheddar cheese, shredded * 2 cups mild cheddar cheese, shredded (or substitute Colby Jack, Monterey Jack, Gouda, or another favorite melting cheese) * 1 cup freshly grated Parmesan cheese * ½–1 cup shredded mozzarella (optional) * Salt and freshly ground black pepper, to taste Instructions 1. Melt the butter in a 12-inch skillet over medium heat. 2. Add the minced garlic and cook for about 1 minute, just until fragrant. 3. Add the dry shell pasta and stir for another minute to lightly toast it. 4. Pour in the chicken broth, using just enough to barely cover the pasta. Bring to a gentle boil. 5. Cook for about 4–6 minutes, stirring occasionally, until the pasta is just shy of al dente and most of the broth has been absorbed. 6. Reduce the heat to low and stir in the evaporated milk. 7. Add the sharp cheddar, mild cheddar, and Parmesan a handful at a time, stirring until smooth and creamy before adding more cheese. 8. Continue stirring for another minute or two, until the pasta is perfectly tender and the sauce is thick, silky, and coats every shell. 9. Stir in the mozzarella, if using, and season with salt and pepper to taste. Tips * The secret is not adding too much broth. The liquid should barely cover the pasta when you start cooking. Too much broth will make the sauce thin. * A 12-inch skillet works great, though a slightly smaller pan also works. The pan should be large enough for the pasta to cook evenly without spreading the liquid too thin. * Feel free to swap in your favorite melting cheeses. One of the most delicious chickens we have ever had! Philly said “Top 10” Roasted Chicken in Creamy Onion Sauce over Pancetta Frisée Salad I saw this recipe by @cocolarkincooks and it did not disappoint. I had been meaning to make this for months Ingredients * 1 whole chicken (about 4 lbs) * 2 tsp olive oil, divided * 1 tbsp Maldon salt (for the chicken) * 2 yellow onions, sliced * 10+ fresh thyme sprigs * 2 tsp Maldon salt (for the onions) * ¼ tsp black pepper * 1½ pints heavy cream * 10 garlic cloves, smashed * ⅓ cup dry white wine * Juice of 1 lemon * Chopped chives or parsley, for serving Method Preheat the oven to 375°F convection. Drizzle a roasting pan with olive oil, place the chicken on top, rub with the remaining oil, and season generously with Maldon salt. Roast for 15 minutes. Add the onions, garlic, thyme, onion salt, and pepper around the chicken. Pour the heavy cream over everything, then add the white wine. Roast for 45–60 minutes, basting every 15 minutes and stirring the onions occasionally. When the chicken is almost done, increase the oven to 400°F to crisp and brown the skin. Transfer the chicken to a cutting board, pouring any juices from the cavity back into the pan. Let the chicken rest for 15 minutes. Remove the thyme sprigs, then return the sauce to the oven for about 15 minutes until slightly thickened and golden in spots. Stir in the lemon juice. Warm Frisée Salad * 1 large head frisée, torn into bite-size pieces * 4–6 oz pancetta, diced * 1 tbsp butter * 1 shallot, finely diced * 2–3 garlic cloves, minced * 1 tbsp Dijon mustard * 2 tbsp red wine vinegar (or white wine vinegar) * 2–3 tbsp olive oil * Salt & black pepper, to taste * Shaved or finely grated aged cheddar Method Cook the pancetta in a skillet until crisp. Remove with a slotted spoon, leaving the rendered fat in the pan. Add the butter, then cook the shallot until softened. Stir in the garlic and cook for about 30 seconds. Another banger from our friend @itscheffatty Ingredients 72 oz petite medley tomatoes 4 cups water 4 cups white vinegar 2 tbsp salt 2 tbsp sugar 6 cloves garlic, crushed 1/4 cup Whole black peppercorns 2 tbsp garlic salt Fresh basil, optional Directions Place the petite medley tomatoes into a large clean jar or container, add in garlic salt, peppercorns, and smashed garlic . In a saucepan, combine the water, white vinegar, and sugar. Heat until dissolved, and pour the warm vinegar mixture over the tomatoes. Add fresh basil if using. Cover and refrigerate overnight. This is one of the easiest, most impressive and delicious meals we make! It takes 5 minutes to assemble and is ready in about 30 min w/almost no active cooking time. It is the perfect meal to keep you out of the kitchen and with friends & family for July 4th! You can find everything in our video at @surlatable for your holiday table! Seafood Stew Yield: 6–8 servings Ingredients * 2 medium onions, diced * 2 pounds small red bliss potatoes * 2 leeks, chopped (use the white and light green portions, stopping where the leaves begin to yellow) * ⅔ cup olive oil * 2 pounds clams * 2 pounds mussels * 3 earns of corn, halved * 2 pounds shrimp, shell-on (snip along the back of each shell with kitchen scissors) * 2 pounds kielbasa, cut into 2-inch pieces * 2 cups dry white wine Directions 1. Heat the olive oil in a 16-quart or larger stockpot over high heat. 2. Add the onions and leeks and sauté until the onions are nearly translucent. 3. Without stirring, layer the ingredients in the following order: * Potatoes * Kielbasa * Clams * Mussels 4. Pour the white wine over the top. Do not stir. 5. Cover tightly and cook over high heat for 5 minutes. 6. Quickly lift the lid, add the corn and the shrimp, and immediately cover again. 7. Continue cooking over high heat until steam begins escaping around the lid, about 10 minutes. 8. Reduce the heat to medium and cook for 15 minutes without removing the lid. 9. Remove from the heat. Divide the seafood, sausage, and potatoes among serving bowls. Ladle the broth from the bottom of the pot over each serving. Episode 2 Teaching to cook before heading to college … this was outrageously good & they did the dishes at the end ! @philliesweatshirt @shanebenaroya Buffalo Ranch Chicken Mac & Cheese Meal Prep: 10–12 meals Buffalo Chicken Marinade * 5 lb chicken breasts, bite-sized * 3⅓ cups buttermilk * ¾ cup pickle juice * 7 tbsp hot sauce @franksredhot * 1 tbsp each: dried oregano, dried thyme, onion powder, garlic powder, paprika, kosher salt * 2 tsp black pepper Chicken Dredge * 5 cups all-purpose flour * 1⅔ cups potato starch (or cornstarch) * 1 tbsp each: dried oregano, dried thyme, onion powder, garlic powder, paprika, salt * 1⅔ tsp black pepper For Frying * Neutral oil * 2–3 cups Frank’s RedHot (for tossing fried chicken) Mac & Cheese * 3 boxes cavatappi * 2 lb bacon, thinly sliced * 10 tbsp flour * 1 ranch dip packet @hidden.valley * 3⅓ cups evaporated milk * 3⅓ cups whole milk * 1⅔ cups heavy cream * ½ cup hot sauce * 1 tbsp Dijon mustard * 3 tbsp paprika * 2 tsp black pepper * 4 cups each: shredded cheddar, Monterey Jack, and Colby Jack Directions Marinate the chicken for at least 1 hour. Dredge and fry in 350°F oil in small batches until golden and cooked through, then immediately toss with Frank’s RedHot. Cook the pasta until al dente and reserve 1 cup of pasta water before draining. Cook the bacon until crispy and remove. In the bacon fat, whisk together the ranch seasoning and paprika. Add the evaporated milk, whole milk, heavy cream, hot sauce, Dijon mustard, and black pepper. Remove ¼–½ cup of the hot mixture, whisk it with the flour to make a slurry, then whisk it back into the pot until thickened. Reduce heat and stir in all the cheeses until smooth. Fold in the pasta, adding a splash of reserved pasta water if needed.
