Creamy Tomato Pasta 🍅🧀🌿 * 2 tbsp vegan butter * 6 Roma tomatoes, stems removed and halved * 1/2 lb pasta * 1 tbsp tomato paste * Heaping ½ tsp onion powder * ½ tsp garlic powder * ¼ tsp red pepper flakes * ½ tsp Italian seasoning * ½ tsp paprika * 1/4 tsp black pepper * 1 container dairy-free @boursincheese * 1/4 cup vegan heavy cream * 1/4 cup vegan parmesan * Pinch of sugar * 2 large handfuls of baby spinach leaves * ⅓ cup sliced basil * Salt, to taste 1. Boil a large pot of salted water. 2. Heat butter in a large skillet over medium heat. 3. Add the tomatoes cut side down. Lower the heat to medium-low and cover. Cook for 12-15 mins, until the tomatoes soften and start to blister. Use tongs to remove the skin. Add tomato paste and spices then mash everything together. Cook for a minute 4. Cook pasta according to package directions. 5. Add the boursin, heavy cream, Parmesan, sugar, and red pepper (I forgot to add them earlier). Simmer for 5 minutes. 6. Remove from heat Ana’s mix in the cooked pasta. Mix in the basil and spinach and let the spinach wilt. Season with salt to taste. #blisteredtomatoes #pasta #easydinner

LENTIL PECAN TACOS 🌮 with @eatpecans #ad A delicious vegan, gluten-free and soy-free alternative to traditional taco meat, still filled with the same familiar flavors and textures that we all love, but without the meat. Whether you’re working on a wellness goal or looking for Meatless Monday inspiration, you’ll love this delicious meal! Ingredients * 3/4 cup unsalted pecans * 1 cup uncooked green lentils * 1 cup diced yellow onion * 4 garlic cloves, minced * 1 tbsp ground cumin * 1 tbsp chili powder * 1 tsp dried oregano * 1/8 tsp cayenne pepper * 1/2 tsp liquid smoke * 2 large tomatoes, diced * 2 cups vegetable broth * 1/4 cup chopped cilantro * Salt and pepper, to taste * Fresh lime juice, as desired Instructions 1. Soak the pecans and lentils in small bowls for about 30 minutes. 2. Drain the pecans and roughly chop into a “meat crumble”-like texture. You don’t want them to be powder; you want them to still have some texture in the mixture. I just let the lentils sit in the water during this time. 3. In a medium pan, heat 1 tbsp of cooking oil. Add the onions and garlic and a pinch of salt, and cook for 3-4 minutes. 4. Add the pecans and spices, and cook for 1 minute. 5. Drain the lentils and add them along with the tomatoes, broth and liquid smoke. Mix, bring to a boil, lower to a simmer and cover. Simmer for 20-25 minutes. 6. Remove the lid from and continue sautéing until the liquid has cooked off and the lentils are soft. Mash if desired. 7. Lavender Matcha Latte 💜 Welcome back to Matcha with Min 🍵 I’ve been hooked on these ever since @k.alexandra8 introduced me, so I perfected a homemade recipe and wanted to share 🥰 Mug is by @feral_functions 🖤 Lavender Matcha Latte * 1 1/2 teaspoons ceremonial grade matcha powder (I use @ippodoteausa) * 1/2 tablespoon lavender syrup (recipe below) * Agave as needed (or more lavender syrup) * 1/3 cup hot water (check matcha container for temperature recommendation) * 4-8 ounces hot unsweetened soy milk Lavender syrup * 1 cup water * 1 cup sugar * 4 tbsp dried lavender buds 1. Add the water, sugar and lavender to a small saucepan over medium heat. 2. Bring the mixture to a simmer, mixing every so often, just until sugar is fully dissolved. 3. Remove from heat, cover, and set aside for 15 minutes. 4. Strain the syrup, discard lavender, and enjoy! #lavender #lavenderrecipes
