It’s not every day that a Bulgarian girl like me (that came from nothing) gets invited to the GENERAL CONSULATE OF BULGARIA 🇧🇬 to represent her beautiful country 🥺. If you’re Bulgarian, you know how important the month of March is to us. March 1 being BABA MARTA (Grandma March), March 3 (Bulgaria’s Liberation Day), March 8 ( Women’s Day). In honour of these important days there’s some incredible events happening near me starting with tomorrow, which I’ll list below ⬇️ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ Illumination of Niagara Falls (Niagara falls will be lit up in our National Colours) 🇧🇬 so if you’re in the area, come and watch one of the wonders of the world be illuminated! VIRAL BLANKET DUMPLINGS 🥟 (but I made them Turkish) 🤤 comment “recipe” and I’ll send it or save this video as the method is below ⬇️ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ **INGREDIENTS** The Dumplings: - Olive oil, small drizzle - 1 lb ground chicken (450g), or any ground meat - 1 small red bell pepper - 4 large shallots - 5 peeled garlic cloves - ¼ cup chopped parsley - 1 tsp kosher salt - 21 dumpling wrappers Yogurt Sauce: - 1 cup plain yogurt - 2 garlic cloves, minced - Salt to taste Paprika Brown Butter: - 4 tbsp butter - ½ tsp paprika - Fresh dill or parsley to garnish **INSTRUCTIONS** 1. Mix together yogurt, salt, and garlic. Set aside. 2. In a small pot over medium heat, melt butter, add paprika, cook 1 min until lightly golden. Take off heat. 3. In a food processor, blend shallots, garlic, and bell pepper into a paste. 4. Pour veggie mixture into a cheesecloth and squeeze out as much water as possible. 5. Mix squeezed veggies with ground meat and salt in a bowl. 6. Heat a pan over medium with a drizzle of olive oil. Scoop meatballs directly into the pan (7 at a time), spacing them apart. 7. Place a dumpling wrapper on top of each meatball like a “blanket.” 8. Pour ½ cup water into the pan, cover, and cook for exactly 6 minutes until water evaporates. 9. For extra crispy bottoms: let cook another 30-60 seconds uncovered. 10. Top with yogurt sauce, paprika brown butter, and fresh dill. Repeat in batches of 7. My Weight Loss & Detox Cabbage Roll Soup 🍜 Ingredients: 1/2 tablespoon olive oil 450 grams lean ground turkey 2 onions, finely diced 3 small carrots, finely diced 5 garlic cloves, minced salt, to taste (taste and adjust) 2 tablespoons tomato paste 1/2 cup jasmine rice, rinsed 4.5 cups chopped green cabbage 5 cups unsalted broth 5 cups water big handful chopped dill Instructions: 1. Start by heating the olive oil in a large pot over medium heat. Add the ground turkey and cook for about 8–10 minutes, breaking it up as it cooks, until fully cooked through. 2. Next, add the onions and carrots and sauté for a few minutes until softened and translucent. Stir in the garlic and cook just until fragrant. 3. Now, add the salt and the tomato paste and cook for 1–2 minutes, stirring, until it deepens in color. 4. Next, add the rinsed rice, and stir followed by the chopped cabbage, broth, and water. Stir well and bring to a boil. 5. Once boiling, reduce to a gentle simmer and cook uncovered for 25–30 minutes, or until the rice is tender and the cabbage is soft. 6. Finish with a big handful of fresh dill, give it a final stir, and taste to adjust the salt if needed. A fresh squeeze of lemon juice will brighten it up. 7. VIRAL CRISPY PASTA SALAD 🥗 CRISPY PASTA: 150g pasta shells Drizzle of olive oil ¼ cup freshly grated parmesan Cook pasta in well-salted boiling water until al dente. Drain, toss with olive oil and parm, then air fry at 390°F for 10–12 minutes, tossing halfway, until golden and crispy. YOGURT DRESSING: ½ cup plain yogurt 1 tbsp honey Dijon mustard 1/2-1 tbsp white balsamic vinegar, to taste salt, to taste Whisk everything together and adjust to taste. THE VEG: 2 cups (½ head) romaine, finely diced ½ English cucumber, finely diced 1 cup cherry tomatoes, diced ¼ cup Kalamata olives ⅛ cup pepperoncini, diced TO ASSEMBLE: Add the veg and dressing to a bowl, toss in the crispy pasta and enjoy! All ingredients to taste. Serve immediately for max crunch. Note 🗒️ I actually like this salad wayyyy more without air frying the pasta lol 😂 so if you want to save yourself a step, it’s worth it. #crunchypastasalad #viraltrend
