Summer in Bulgaria 🇧🇬☀️ aka home 🏠
It’s not every day that a Bulgarian girl like me (that came from nothing) gets invited to the GENERAL CONSULATE OF BULGARIA 🇧🇬 to represent her beautiful country 🥺. If you’re Bulgarian, you know how important the month of March is to us. March 1 being BABA MARTA (Grandma March), March 3 (Bulgaria’s Liberation Day), March 8 ( Women’s Day). In honour of these important days there’s some incredible events happening near me starting with tomorrow, which I’ll list below ⬇️ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ Illumination of Niagara Falls (Niagara falls will be lit up in our National Colours) 🇧🇬 so if you’re in the area, come and watch one of the wonders of the world be illuminated! 📍SIMBIOSI @simbiosi_firenze is my favourite pizza 🍕 of my trip thus far. The pizza and Coca Cola is organic, the ambiance is incredible, and truly a hidden gem 💎 I don’t see this place talked about on social media but it truly deserves the hype! ICE 🧊 COLD 🇧🇬 CUCUMBER SOUP 🥒 also known as TA-RA-TOR in Bulgaria — you can find this refreshing ice cold cucumber soup allll summer long on every corner and restaurant in Bulgaria. If you love tzatziki, you will LOVE our traditional dish. ⚠️ Comment “RECIPE” and I’ll send it to your DM’s. Pair this with a side of ANY grilled meat or seafood and liveeee your best life. You will need: cucumber, plain yogurt, garlic, dill, olive oil, water, salt, and ice is optional. A squeeze of lemon 🍋 would be lovely! #coldcucumbersoup
RICE PAPER MANGO 🥭 MOCHI 🤤 comment “plate” and I’ll send you the plate I used and save/share this video please 🙏 recipe is below ⬇️ 1 mango (1/2 puréed, the rest chopped) 1/4 cup plain yogurt honey, to taste 1 sheet rice paper (wet in water) icing sugar 1️⃣ Puree the mango on the grater plate (or food processor) add the yogurt and honey 🍯 stir. 2️⃣ Wet the rice paper under water and let it soften for min until you can work with it. 3️⃣ To the bottom of the rice paper, add a spoonful of diced mango, the mango yogurt mixture and some diced mango on top. Fold it like a packet and freeze for one hour. 4️⃣ After it has solidified, you can roll it in some icing sugar and enjoy right away 😊 and FOLLOW ME @themodernnonna for more recipes like this!
Comment “recipe” and I’ll send it to you 🤤 VIRAL NO WATER CHICKEN SOUP 🤤 is 90000/10 — this is a soup 🍜 I can definitely GET BEHIND and make on repeat 🔁 the broth is SO rich and the veggies turn so sweet and jammy. This is my take on it below ⬇️ ITS CALLED NO WATER CHICKEN SOUP BECAUSE NO ADDITIONAL WATER IS ADDED IN THE BEGINNING like you would in regular soup. It’s the vegetables and the chicken that create the broth. Also this is a traditional Chinese method of making Chicken Essence (or waterless chicken soup). It’s a legendary, nutrient-dense healing remedy. SAVE THIS RECIPE and follow @themodernnonna Napa cabbage 🥬 (3/4 of a head) 2 yellow onions 🧅 2 carrots 5 cloves garlic 🧄 1 apple (I used honey crisp) 1 whole chicken salt + pepper NOTE: although this method works WITHOUT adding water 💦 I still feel the need to tell you that you should add at least 2 cups of water on the bottom in case your veggies don’t release enough liquid or add some as you go because it wasn’t enough for me. Cook it covered on LOW heat for 1.5 hours or until the meat falls apart. I like to serve mine with a side of rice 🤤 Truly OUTSTANDING

If you love tzatziki, you will LOVE our traditional dish. You will need: cucumber, plain yogurt, garlic, dill, olive oil, water, salt, and ice is optional. A squeeze of lemon 🍋 would be lovely! This dish has all the great flavors of a delicious Greek tzatziki, but with added filtered water it becomes a luscious and delicate soup. I love the subtle textures of crisp cucumber and garlic, but you could chop everything even finer if you want a smoother soup 🧄. ▫️ 1 English cucumber (diced), or finely grated ▫️ 750 grams plain yogurt, (one 26-ounce container) ▫️ 2 teaspoons salt, to taste ▫️ 4 tablespoons dill, to taste ▫️ 1-2 cloves garlic, minced ▫️ 2.5 cups cold filtered water ▫️ 1 tablespoon olive oil ▫️ ice, optional 🥒 Nonna’s Tip: You can either grate the cucumber on the smaller hole setting of a box grater or dice it finely. https://themodernnonna.com/cold-cucumber-soup/
Pan Con Tomate 🤤🇪🇸 comment “plate” and I’ll send you the link to the plate ♥️ Tomatoes, garlic, olive oil, salt, and basil (or oregano) over charred sourdough. It truly doesn’t get better than this. I added a drizzle of olive oil on the bread and charred it over a gas burner just like my Bapche used to do. Granted, we didn’t have a gas stove (we had to heat ours by burning wood) but the taste of charred bread brought me back to my childhood. If you gave me the choice between a recipe with 18 ingredients or one with just a few simple, quality ingredients, I’d choose simple every single time. #pancontomate
